One thing to point out, darkened egg yolks are a sign of overcooking. Cook them for 6 mins and put them in chilled water with ice. That will stop them from getting overcooked, also add vinegar along with salt in water

The point here is to hardboil the egg so it's easy to make the egg balls later, it's not a particularly health conscious recipe as you can see 😂

@@vishnu2407 its not a health conscious recipe but if you tend to over cook them now, they will get cooked further in the oil. Also yellow egg yolks taste better than black ones
