Part 2 of 2 of my edible jelly crystals recipe. Something that I always loved about these Asian treats growing up is that they are mild, sweet, crunchy on the outside and soft jelly on the inside. No mold required! Kohaku-tou translates to “amber sugar” but I’m sharing a multicolor / watermelon tourmaline treat.     Is there any way to make these dry faster? Like maybe on very low in the oven? Just opened recipe again and saw how long to dry but wanted to make for a party tomorrow. :/ Thanks!

    Hi Raven thanks for watching and thanks for the questions. I haven’t tried either of these things so I couldn’t say. If you do, I’d be curious how this turns out :). I usually create the crystals as gifts or to top a cake.

    I wonder if there is a way to make a sour version of these, you think they could be dipped in citric acid before drying? I’m trying these for sure hummm

    I love this question! One time I made sour patch macarons. I mixed a little sugar and citric acid and rolled the assembled French macaron in it - if that makes sense. So! Yes I think what you’re suggesting would be so good 😊

    I keep them open but if you want to lightly cover with Saran Wrap I think that might be okay. The parts that get stuck to the candy don’t really dry as well.

    I am from the Philippines and I have tried making this using a non-refined agar. I noticed that when I started boiling my mixture, it slowly became jelly-like and it is already set in the process of simmering the mixture, absolutely the opposite of trying to melt everything. I use 1/2 cup of water, 2 tablespoons of agar, and 1 cup of sugar. I tried all the methods of mixing it with water before boiling it, dissolving the agar with cool water before turning on the heat, and adding the sugar. I was able to make it into a syrup liquid once but it did not set at all and ended up being taffy in the fridge. I used two different agar already but to no avail, I still failed. Is there any tips or anything you may recommend to help with this issue? TIA!

    Hey Cyn! Thanks for your question!! That's a layer of white Kohakutou. I was experimenting to see if the white would help brighten the colors. Do you like it better with the white?

    RoxStarBakes how nice! Thank you for answering my question, in my opinion, I like it more whit powder colors, give it a more real touch, maybe it just depends on the amount. In another hand, in my country I haven’t found the telephone brand, so I’ll try the ones I have available and see how it goes... I’m your fan, thanks for sharing!

    i made this with mr gulaman if thats ok i known gulaman is agar agar but it turns out slippery idk if its working also do u need to put it on warmer places or cold

    I haven't tried that brand and would be curious to see how it works. Room temperature works great - you could keep it in the oven if you'd like to keep it out of the way. I have luck drying in the fridge but if you leave it in too long it will harden all the way through. Hope that helps!

    I haven’t tried it but I think that as long as it doesn’t get over 100 degrees Fahrenheit it should work!

    When I’ve done this only agar gives the crunchy texture outside with gummy texture inside. I’m sure doing it with gelatin would taste yummy it just wouldn’t be the same candy. If you try it and it turns out the same I’d love to know 😊

    Why is mine sooo sticky on the surface and how come when you poured the mixture into the glass container you don’t have a layer of foam from the boiled sugar? I think the layer of foam is what makes the top so sticky for me.

    Fridge, oven or countertop. Gently cover it with Saran Wrap so air can flow.

    Well that sound’s frustrating! Could be for a number of reasons. How long have you dried them for? Which brand of agar did you use? Did everything dissolve during the boiling process?

    Agar Agar Powder is a Vegan Gelatin Substitute, 100% Natural Red Algae, Gluten-free. Does that help?
