A few month ago, I interviewed a confectionary company called Midori seika in Osaka and learned about how to make kohakutou, which is a sweet Japanese jelly made of agar. After I came back to Fukuoka, I found a local company that makes beautiful kohakutou and it made me wanna try making it myself.

    Rachel saying that she would have loved this project as a kid reminded me of an old video of them where they go to a Geology Museum and Rachel mentions how she loves geology. Parents, I encourage you to try projects like this with your kids, that's how kids discover their passions!

    As a child I would look at pretty sparkling rocks and think "It's sad I can't crunch on these" as soon as I saw these candies as an adult I immediately purchased them. They are *extremely* fun to eat.

    Kohakuto is one of my favorites. But I just can't get over how well-behaved Haku and Nagi are when they're on walks, sticking close by and being so calm. It speaks volumes about their trust in you.

    This reminds me of how liqueur candy is made. You heat the liqueur you want to use, dissolve sugar into it, and pour it into a mold made of corn flour. The molds are made by pressing shapes into a bed of corn flour (or corn starch). As it cools, the sugar crystallizes on the surface of the liquid, forming a shell, just like it did in these things when they dried. The resulting capsules can then be taken from the mold and covered in chocolate.

    We have crunchy jelly in my country too! They would make it out of flavored syrup or sweet herb juice (Ex: Chrysanthemum) but they only do it in cubes or small flower molds. Seeing them as crystals now, they're so pretty!

    I love how you include the cats in every video- the meowing from Poki and the way Haku jumped when the wave came towards him was adorable!     as someone who often feels the urge to bite or eat inedible things, this is a dream come true. I mean, i've known about this type of candy for a couple years but it still just seems so satisfying. I really want to make ones flavored like different fruits. I feel like fruits that are a little bit sour could be really good. You could also layer different colors to make more crystal patterns, like blue lace agate or tree agate (two of my favorite crystals)
