so in other words... play ambient alternative rock while doing the dishes is legit and the most safest way to be sanitized, but playing progressive jazz is out of the question.. got it...

I dont see a busy restaurant either for this video (including servers/waitresses/kitchen staff and managers...They ALL help bring dishes/etc to dish area as well help divide dishes/silverware, utensils and cooking ware) . Every restaurants works different and has different equipment/size machines.

Agree with you there, I work for a business that's 200 year old and the cleaning area isn't as big as shown in the video.

+Anthony Ramirez Why would they do that - dishwashers normally have a disinfecting rinse. In addition if you disinfect washware before washing it, it is possible that it could pick up bacteria, during the wash cycle, which normally operates at a sub-leathal temperature with respect to many bacteria.

Personal protective equipment. The cleaning chemicals are pretty safe for casual contact on skin, but could become irritating over the course of a day, and probably wouldn’t feel that great if splashed in your eyes. Also, when dealing with used dishes and silverware, it’s a good idea to assume that one or more of your guests has something you don’t want to catch.
