About OFF GRID with DOUG and STACY:
We moved to our 11 acres in 2011 from a large city in the Midwest with zero carpentry and farming skills. We live with no solar / wind power / public water or well. We share our adventure to a sustainable life, growing our own food from vegetables to meat. We post videos DAILY and they range from HOW TO to EVERYDAY LIFE and NUTRITION on the off grid homestead. We were city folks just like you probably and wanted to enjoy life and have more control over our food. We share food recipes as well as natural remedies.

    The way we cook the sweet potatoes leaves it’s like salad but we blanch it, we put fresh onion, tomatoes, little vinegar and fish sauce and if you have lemon you can add lemon, that is one of the popular Filipino dish in the Philippines

    I meant to add: That is one beautiful meal! I was feeling the same about the elk burgers I made last night. So much of the meal came from our own garden, the elk was local caught by some friends that we helped out and they gifted us with a good amount of the burger, and the eggs used in the mayo and in the burgers were from our own chickens and the buns I made myself from home milled organic flour. Wonderful feeling that just keeps getting better with each new homemade and/or home raised thing we get to add :)

    Stacy I think you could use an extra little table/shelf that's about 1 foot lower than your prep table so that you can set the camp chef on that and be able to more easily reach and see the pots as you are cooking on the burners. I'm sure you know someone who could make a little stand just for that! :)

    Thank you for doing this one, I've been waiting to see how it was done. It reminds me of the way my mother used to "wilt" greens. She often cooked bacon, keeping the grease in the pan, then adding sugar and vinegar. She did this with lettuce and spinach from the garden. I remember she tried it with beet greens, but we didn't like it, so we never had them that way again. My little crop of sweet potatoes seems to have sent the vines out of the containers and the vines have put down roots. I hope that mean extra potatoes. if not, at least my little garden area has lots of green in it. Thank you again for showing us how to cook the vines. Blessings

    I dry the tip of the vine leaves; last 3 to 7 leaves. Then I powder them and sprinkle in so many soups, casseroles, skillet veggies, etc. all winter long. Love 'em! I also have been making raisins with those cherry tomatoes. I douse them in powdered spices; garlic, onion, red pepper, barbeque seasoning(my favorite), cumin, curry, etc. I make garlic parmesan, barbeque, and chili flavors. They aren't potato chips, they're tomato chips if liquefied with big tomatoes! They aren't raisins, they're tomasins (?) for the cherry romas and others! And they are delicious. Just cut them in half so they dry in time. Thank you!

  • @eaglegoldengate4184

    @eaglegoldengate4184

    6 жыл бұрын

    Hi SewHappy! The first couple of times I just used my ton of baby cherry romas. I cut them in half and doused them . . . garlic, onion, honey, barbeque spices that I was given, a little charcoal salt, red pepper flakes, cayenne powder, rosemary, salt, um, I think that's it . . . season to taste. I am not a pepper lover but maybe you could include some of these chipped up. I slice the tomatoes in half and slather them in the spices, and put them in the dryer. There is some totally good for you powdered sulpher you can use to discourage mold if you make a bunch and don't want to store in fridge. Don't get them too dry, leave a little chewy in it. They will be sticky when done; I use a little of the powdered spices plus a little pure cane organic sugar in the bottom of a bag to shake them in and coat them. Helps keep them from sticking and gives a burst of initial flavor before chewing. Then I had regular tomatoes to add to the mix. Essentially I did the same only it was juicier. I used parchment paper in the bottom of the dryer and slowly basted with the spicy liquid. I've been experimenting with other flavors. Last time, I even added some flax seed to add crunch . . . I liked it! I would imagine some chia or other seeds and small nut chunks might be very satisfying. Rain Country has an amazing video on tomato leather that also has these possibilities. Enjoy and God Bless!

    Looks wonderful. And you did grow it yourself, even the lamb. Sorry to say I have only tried lamb once, many, many years ago. I bought it from a local store and cooked the chops myself. They were absolutely horrible and I couldn't eat more than a bite. I have never had the nerve to try them again. I am positive I did something wrong, and hope to have the courage to try them again one day. You two make them look so delicious. Thanks!

    I did not know sweet potatoe leaves were "greens". Gods bounty just is everywhere. Thank you for showing how to prepare this. The rest looks wonderful too. I'll be right over for dinner!!! (Seriously Stacy you could do a cooking show, and outcook Hell's kitchen, or anyone really). Love your channel!

    This year I've been trimming back the runners, keeping growth contained to the long mound that we've planted our sweet potatoes in. Trimming and then cooking the tender ends have given us one more thing from the garden to eat.

    I love broccoli leaves (reminds me of collard greens) had no idea you could eat sweet potato leaves. Gonna have to give them a try. I believe in eating as much of the whole plant as possible.

    Sweet potatoes carry an extremely high amount of Oxalates. I get kidney stones but I have beat them by making sure to drink lots of fresh water to dilute the oxalates. I have not had stones for over 10 years.. Just in case folks would like to know. I was tired of denying myself of SP but now I grow them. You have helped with some aspects like the leaves. I even grow them indoors...Thanks for your great videos
