We buy our beef by the case at Costco because we save so much money doing it this way. It does require another freezer in our garage but it's worth it.
We are Steve & Steph (StevenSteph™)! We can't be boxed in by labeling what this channel "is"! It's like Seinfeld....this is a channel about nothing! LOL
If we must...in a nutshell we are a couple of weirdos and we looooove having fun doing anything and everything that entertains us! Usually it involves having a good laugh about something! Whether we're playing games, going on adventures, exploring, or just sitting around chatting with you guys...we're gonna enjoy ourselves and we want you to come along with us for the fun!
By the way, since you all want to know...we have been married since 2001 and we live in Southern California. We've got 3 amazing grown kids and 5 absolutely adorable grandkids.

    Lots of you are asking about my air fryer: Ninja Foodi 8qt 14-in-1 but it looks like they’re out of stock on Amazon at the moment: amzn.to/3xdkbo1 They do have a 12 in 1 though (doesn’t do sous vide or have a thermometer but otherwise it looks the same! amzn.to/4c7l2FF Also the sheet pan with the rack I showed is AWESOME for dry brining. I saw dr Chaffee using them and had to get some too! They’re super heavy duty and don’t rust and go in the dishwasher.     Kroger and Tom Thumb have ribeye on sale for $5.99/lb all the time. Chuck is $3.99/lb, sometimes less.

    OMG! I clicked on this because we just started carnivore AND just joined Costco...The whole time I'm watching, I kept thinking how freaking familiar you both look!! I'm subscribed to you on my reseller channel, which i haven't been on for almost 2 years but YAY! I am so happy to see you both!! And see that you're doing so well!!! Wish us luck on our carnivore journey! It just makes so much sense and we are having a great time figuring out what meals we like and what we don't.

    Im 68 male with thyroid and vertigo issues. I started several times after 2 days I cheat and start all over!! As of 6-22-24 I'm on day 4. I'm going to beat those cravings!!!! I have to do this!!!

    Hey Randy 😮 I fell off last year after 3 months and ate crap for four months and regretted it badly gained my weight back. But started over in January 2 so I'm almost at 6 months. It gets way way easier. And I'm 68 also

    You guys! I just bought an 83 LB. box of chuck roll at our Costco in N . Ca. For $4.29 LB. 🥩🥩🔥 I have called the supermarket when having a great sale on ground beef & ordered 100 LB &. they have no problem w/it. Set a time them for pickup & grind it up. That way too it hasn’t been sitting in the meat trays😊 Thank you so much for sharing this tip with/us❣️

    Food addictions are really hard to overcome for some people. I feel for you because you want your wife to have a better quality of life. We have friends and family that we care about who could thrive on the carnivore diet but they won't let go of their poor food choices. We hope your wife gives is a try.

    Hi tell your wife I have fibromyalga and fused disks need new knees ect. I started on keto then onto carnivore and my pain is under control and I I've lost 2 stone in 2 months. It's hard at first but once she's into it and realises the benefits, there's no going bck. Much love from Liverpool UK 🇬🇧

    Are your steaks tender? I don’t know anything about a chuck roll and breaking it down but would love to buy one. I use a slow cooker for chuck roast because they’re tougher. We just bought a meat grinder to grind our ground beef from chuck (haven’t used it yet) can you do a more detailed video on how to cut the beef? 🙏🏼🙏🏼🙏🏼

    I have been on carnivore for a year; after the first 8 months I was feeling so well; lost some weight; my body composition was certainly different; the last four months I fell off the wagon primarily because of family issues and having to be in situations which I had to eat whatever was available; I can tell you my joint and body pain returned; I am now back on carnivore it will be telling if all this joint pains go away;

    I spend roughly 150-200 per week for groceries (I'm including everything in this even toiletries, but most of this is food), so if 290 lasts you 3 weeks, that is good.

    We did a costco ribeye roll and the price was the exact same if we had purchased them already cut. The only benefit was we were able to cut them into the sizes that we wanted. We freeze it, so we like to cut some of them kind of thin so they don't take long to defrost or cook if we are in a hurry or really hungry.

    I was hoping you would show an easy way to cut up the roll into steaks as the other channels that show this are complicated and produce a lot of what they call "meat to grind into hamburger". They don't seem to get a lot of steaks out of their "rolls". Great channel!

    With prices the way they are I'll be going your way. I buy the case of 80/20 ground beef, whole rib eye in cryovac but never heard of chuck roll. Thanks for the awesome video.

    I'm right with you this one only I sous vide my. I cut them up into big steaks and cook 20lb at a time. Cook them for 32 hours in the sous vide then I freeze some and save our what want to eat. You can sear them if you like or heat them up in the microwave even. I don't have to cook for like a week. I just take what I need out of the freezer when I need it. Chuck roll is the way to go. I only eat Chuck for beef can fish sardines, herring eggs and butter that's it. I've been doing this for over a year now and I'm not going back. Glad you found the Chuck rolls❤

    Different faces, different house~ EXACT same everything else, literally you guys! Same shopping in bulk, same butchering w/Dan taking out trash & recycle & feeling a little bad that I'm doing all the cutting/wrapping~ but not really, since we both prefer that I do tbh, it's all good=). Same week's worth in fridge, rotating out from freezer, etc.. also 90~95% of what we eat every day too, though I'm not always eating twice, Dan usually does. It's taken me almost 3 yrs to get my appetite up to where it is now, which is about 10~14 oz per day of meat, plus eggs & fat bites, same same. Too many years of grazing, thinking that was best for my health, but it shrunk my stomach & appetite. *Plus, I was in menopause when we started, so that was part of it too~but no meds, no HRT, no wacky symptoms either btw. Sometimes we get sub primal whole NY or Ribeye & cut that up too, but chuck roll is where it's AT, in our opinion~so darn good! Hey, thx for sharing tip on sprinkling fat bits w/gelatin, will be trying that too. Believe it or not, I even have that exact same green canister of Vital Protein brand right now, but I bought it for $5 at our local discount store(Peoria Discount Grocery), so whatever brand is there. They buy pallets from Sprout's & other stores of expensive items they couldn't sell for ridiculous retail, so we swoop in & get lots of good stuff for super cheap~ I love that place! Anyhow, I'm going on too long as usual~ always so good checking in w/you two. I truly love knowing how many of us are out here eating proper food & absolutely thriving, feeling our very best, AND.... enjoying our amazing lives!! This one I have no eye makeup on, so I look a bit ghostly/albino, but I still love the photo & it shows how much has changed I think)

    Sloan market in Buffalo where i get my meat has Prime Chuck Roll for $4.99 lb about 20 lb average. Prime boneless Rib eye for 13.99 lb and 16 lb average. I watched and learned from KZread on how to cut and will never go back to buying cut steaks

    Wow. I just pulled mine out of the garage to take to donation. Lol!! I used to use the heck out of it, but it's so big and cumbersome. I've tried desperately to get an air fryer (bought 4 of them) but I can't get past that plastic smell. It makes me sick. I've done all the tricks for the "burn off" but it's till there. I might have to give the nuwave another try because it doesn't smell for sure. Ugh!! It's so big though!!😩

    Oh wow! That's a tremendous deal!! I watched a video tutorial about breaking down a chuck roll a while ago - I might have to dig that up and try this myself. Definitely consider treating yourself to a 'breaking knife'. I picked up a Victorinox 10 in breaking knife off of ebay (brand new) at a great discount and it makes SHORT work of a whole ribeye or strip loin too! I bet it would do great with a chuck roll too.     That’s awesome! I just bought a whole beef and it was very similar in price per pound. I want to say $4.15? That is everything, steak, brisket, ribs, liver, ground beef and suet. I’m happy with it! Not grass finished but local and DELICIOUS….❤️👍 I’ve been beef only for four years now and I absolutely DON’T get tired of it!😊 How long have you guys been carnivore?     You can also get them individually. You don’t have to get the box. I think I paid around $60 for a 17 lb roll, last time. You also get different cuts in a roll, one being a Denver steak, which is a beautiful cut of meat❤

I've heard the quality varies within the roll from one end to the other. What are your thoughts? I sure what rather just butcher steaks than do ground with part of it -- especially cuz I currently have no grinder! LOL

    I get ground beef for between $0.99/lb and $2.99/lb at a local Japanese market. I have to go early in the morning and I can't get all the quantity I'd like but what I do get feeds me and my wife a lot of meals most weeks.

    The last time I bought beef it was a big plastic bag like that from Smart and Final, but just ONE bag and it was also about $4.19 lb for sirloin which is round, i guess, from the other end of the cow and a bit leaner than what you've got. I carved it up for various types of meals and froze it. It was a lot of work! but worth it when for when I've got the beef craving. I eat a lot of chicken.

Day 4 of my carnivore lifestyle & I am already experiencing fantastic results. No carnivore flu symptoms whatsoever, no hunger pains or any cravings. In fact I am extremely alert & energetic. I was experiencing lower severe back pain due to weight gain...... that has completely subsided!!!! 💪 My clothes are less tight and I am completely astounded at these rapid results!!! I have modified my carnivore diet to Include OMAD. I Only eat @ 1:00 p.m. everyday and specifically keep a strict carnivore diet. I wish I had discovered this sooner. During covid I gained 80lbs and have been struggling to lose it! I will keep you posted on my 7th day! That's my weekly weight in date! In my mind I'm a participant In that reality show The Biggest loser! 😂🤣 Thank you so much & once again and have a blessed day 🙏

    Going to Costco today with my husband so he can do the heavy lifting! I've gotten a ribeye roll once before, but now I'm on the hunt for the chuckroll!     i own a farm estate in the UK and we always eat our own produce and encourage people to buy from the farm shops... you get better value for your money... we do pork, beef, chicken, turkey, pheasant, duck and goat... then various dairy products, anyone wanting to stock up in bulk i advice to get a actual walk in freezer, cheaper than 3 to 4 chest freezers... even cheaper if you are on solar... also what i like to do is any tiny off cuts i quickly deep fry for snacking on... grand kids love it... we bought a ninja twin raw airfryer a few months ago we hardly use the main oven... how often do you have pork?

    ❤❤ ???? QUESTION PLEASE. Thanks for this video. I am very curious though , if I am able to cut the entire chuck roll UP into steaks. Because it appears to me , when I look it up online,the different butchers or chefs make it look like you only get a few steaks from the chuck roll and the rest are roasts or grind meat?? Please clarify if we can cut the entire chuck roll into steaks. I also noticed the one you got in this video was USDA choice rather than prime. Was it still tender and flavorful, even though it wasn't Prime? Thank you for your time.

    Did you two just dive cold turkey into carnivore? I'm having a problem craving frozen grapes & strawberries. I've never really liked the taste of beef so just jumping in cold turkey is kinda hard

    Exactly what I do! At Costco too. I went last night & they were out of chuck rolls-phooey. I got chuck roasts & they were more per lb-$4.99, but still not bad. The fat is mostly trimmed though. I add tallow, or eat tallow cold bc the rendered fat isn’t great on the tummy. BTW, you two pushed me over into carnivore. At first I thought carnivore sounded so crazy, but now I are one! Ty for all your tips. I’ve followed your advice a lot. Also I started watching your channel with reselling & dumpster diving bc I’m a reseller too

    Another great place to get chuck roll's are at US FOODS/ Chef Stores... They have great prices on meat and there no membership ... Love me some chuck eye steaks.

    I love chuck. I could eat it every day. It’s labeled choice. Do you roast the tougher cuts or Sous vide the heck out of them? Laura Spath has a great video on buying chuck. I showed my husband who is not carnivore and he said get a box. 😂

    Glad to know our Hawaii Costco is only $.50 per lb higher on the ribeyes. I might buy a whole ribeye on my next Costco run. I got a little tired of the chuck but you guys made it look delicious. Right now I'm working on the NY steaks I got for $9.99 a lb last week at our Safeway. Always on the hunt for fresh kill...lol

    Our opinion is it makes every type of steak we've eaten better. Mainly because it's consistent. Once you dial in the cooking temp and time you will have the perfect steak for you every time.

    Hello there, You made me very hungry! I have a few questions. A) You said the meat called chuck roll if I'm not mistaking? B) Was it 13 min for each side or 13 min in total? My air fryer has 2 racks with roatsrey option rather than the deep insert you have. If it doesn't work for me, what is the name of the deep fryer you have?     Hi Tina, The meat is indeed called Chuck Roll. We cook for 13 minutes total, the fryer makes a noise when it half way done, no matter how long you cook it, that's when we flip the steaks. Our Fryer is the Ninja Foodi 8qt 14-in-1 but it looks like they’re out of stock on Amazon at the moment amzn.to/3xdkbo1 They do have a 12 in 1 though (doesn’t do sous vide or have a thermometer but otherwise it looks the same! amzn.to/4c7l2FF Thanks for watching ❤

    I buy the whole ribeye from Costco and cut my own steaks. Butcher wizard channel shows the break down its pretty easy. Ground beef and chuck are also inexpensive at Costco.

    Not in Canada🇨🇦Costco is a rip off….and I do believe all the large regular grocery stores are afraid of them….so on holiday weekends they put on huge sales..lI can buy rib eye for $8.99/lb🇨🇦💵 Or T-bones $7.99/ lb and NY Strip $7.88/lb and top sirloin only $5.99/lb so much cheaper than Costco! Next sale is July 1, for 🇨🇦Canada Day🇨🇦‼

Costco is def pricey here but maybe not for the cut they are talking about, I think. BUT it is still more like $6.50/lb at Costco for the cheapest hunk of beef in the meat bunkers. They do have different prices for a boxful tho. Might be worth asking about.

    Grassfed beef or steak isn't the same as grassfed + grass finished. Grassfed beef means they were eating grass at some point in their life. The Grassfed + Grassfinished means they ate grass their whole life from start to end. I'm sure there might be a few grassfed that was grassfed their whole life, but to know, you would have to ask the company/farm. The ribeye steak I buy at natural grocers that is grassfed + grassfinished cost 15.59 for 8oz.. that would never work if you are carnivore, but I'm not. If I were you guys I would add Cabbage into the mix, raw or oven roasted/baked. Both steak and cabbage has one of the highest concentrations of Sulforaphane which is VERY anti inflammatory in the body. Reason I told you about the grassfed "lie" is that it's not always better then what you got there. So keep on with the Costco stuff, can't go wrong there.
