    What you ordered is basically known as “beyyaynetu” (meaning variety). Yours is combo, but there’re also vegetarian or vegan options. The dishes I see here are: collard greens, green beans, cabbage, keyy misir (split lentils), shiro wot (made of powdered chickpeas), difin misir (lentils), alicha ater kik (split peas), tibs (the center dish, usually made of lamb meat), doro wot (the chicken dish), keyy siga wot (the red meat stew, usually beef or lamb in the US), alicha siga wot (the yellowish meat stew, beef or lamb), aybe (Ethiopian cheese), the the red spice is called “mittmitta”. Tips: If the dish is yellowish (it’s turmeric based), if it’s red/ish then it’s berbere based (Ethiopian spice made of red chili peppers), all the dishes are eaten with injera (only use one hand to eat), sometimes bread is optional (usually for breakfast), absolutely recommend Kitfo! (raw minced red beef, flavored with traditional butter & spices, medium or well-done is optional too)

    I will admit that I'm biased because It's a cuisine I grew up on. We're vegetarian 3 days a week when we fast and crazy carnivores the other days. Most of my American friends always order vegetarian. Our most common spice (Berebere), is actually a combination of at least 12 spices. Our cuisine goes back thousands of years. Please enjoy. In Washington DC, Ethiopian cuisine has joined other cuisines like Chinese and Mexican in popularity. Please enjoy.

    If you’re able to cook a nice doro Wot (the chicken dish here) you’re considered a talented cook in Ethiopia. It’s one of the toughest dishes, mainly because the recipe follows a certain technique of separating the chicken into 12 distinct pieces. The pieces are known as “ye doro billit” (doro means chicken in Amharic). Getting the pieces right is very essential, because if not you’ll be embarrassed when you serve it. The tradition is that after the chicken is slaughtered, you’ve to peel off the feather & skin completely (some add the skin separately). Then you separate the thigh & legs, the wings, the torso and so on. After that, it’s at most important to remove any remaining fat & such. The pieces are then washed with lime & salt several times. You can leave it in the water until you prepare the onion base & that can help remove any remaining blood. The clean pieces will look nice and smell like lemon, then you know you’ve got it right. Your chicken pieces are now ready to be added to the onion base. Follow the authentic recipe of the dish for the best results.

    Coffee ceremony is an integral part of Ethiopian culture. The coffee is prepared from scratch. You wash the raw coffee beans with both hands (rubbing them between your palms) & rinse as needed, then roast to nice dark brown (pan & wooden spatula can do), grind the beans (not finely tho), brew using Jebena (for authentic experience) or special kettles like moka pots. When brewing with jebena you’ve to keep an eye on it. And after brewing, wait for a couple minutes for the coffee to settle before serving as it doesn’t have a filter.

    The powdered spice is called 'mitmita'...The meat you had were beef and ofcourse chicken. Ethiopian coffee is actually number 1 grade. Actually, you got to add a bit of sugar or sweetner because it is just strong. Actually, you did your homework ahead of your visit. I could tell you knew a lot.🔔👍

    You should have combined different flavors in one bite ...for example the cheese(aybe) has different flavour when eaten with the chicken(doro) or beef stew (wot) .🤦‍♂️🤦‍♂️..thank you for trying our food.

    G'day I make the lamb stew 😋 and yes the spice mix is call Berbere and the bread is called Injeera very sour. I eat mind with rice and boiled eggs so 😋 😋

    The one with an egg and chiken leg is called Doro Wat. It is served for special festival and holidays. The chees is home made chees. Do u know that coffe is first discoverd in Ethiopia. The place colled KEFFA,western part of ethiopia. If u come to ethiopia coffee is surved in every home, with a special coffee ceremony. Thank u for testing our food. God bless u and ur families.
