Ice Cream Sandwich Cake:
INGREDIENTS
Whipped Cream:
- 2 cups (or one container) whipping cream
- 3 tablespoons powdered sugar
- approximately 3 teaspoons vanilla
Cake:
- 12 ice cream sandwiches
- 12 oz container cool whip or homemade whipped cream
- M&Ms (or chocolate candy of choice)
- Fudge topping
DIRECTION
1. In an electric mixer with a whisk attachment (or large bowl with hand mixer) add whipping cream and vanilla, mix starting on low and move it to a medium-high speed until you have soft peaks. Add in powdered sugar and mix until you have medium peaks. Set aside.
2. Unwrap and place 4 ice cream sandwiches on your serving plate.
3. Add two large scoops of whipped cream on top of the ice cream sandwiches and smooth out until flat.
4. Add candies and drizzle fudge sauce (heat in microwave for about 20 seconds if not drizzling well).
5. Repeat for 2 more layers
6. Freeze for about 3 hours (or as long as you can wait!)
Semi Homemade Cannoli:
INGREDIENTS
- 2 cups Ricotta (one 16 oz container (full fat)
- 1/3 cup plus 2 tablespoons powdered sugar
- 1/4 cup whipped cream (left over from ice cream sandwich recipe)
- 1/2 teaspoon cinnamon
DIRECTIONS
1. Whisk ricotta.
2. Add in powdered sugar and whisk.
3. Add cinnamon and continue to whisk
4. Fold in whipped cream with a spatula
5. Add chocolate chips
6. Fill piping bag with mixture using a large piping tip
7. Pipe filling into a cone, going above the edge.
8. Sprinkle chocolate chips on top and serve
NOTE: Best to assemble right before serving, or you can refrigerate for 15 min, but any longer and the cones will get soggy.
Raspberry Mousse:
INGREDIENTS
amounts are all to taste
- Unsweetened greek yogurt (5%)
- about 2 tsp Honey (or maple syrup)
- Lime
- frozen raspberries
- Mini chocolate chips
DIRECTIONS
1. Mix honey into yogurt
2. Squeeze lime and stir.
3. Stir in frozen raspberries, smushing them to release their juices.
4. Mix in chocolate chips.
5. Freeze for 30 minutes. Stir. Freeze again for 15 min longer. Serve!

Here is an amazing cookie recipe I learned at cooking school S’mores Blossom Cookies -1 cup graham cracker crumbs (250mL) -1 1/4 cups Organics Flour (310mL) - 1/2 teaspoon baking Soda (2.5mL) -1/4 teaspoon salt (1mL) -1/2 cup butter, softened (125mL) -3/4 cup brown sugar (175mL) - 1 large egg -1 teaspoon vanilla extract (5mL) -12 large marshmallows, cut in half -24 Hershey’s kisses chocolates - Canola spray for pan Method: 1. Preheat oven to 350 degrees Fahrenheit. Spray a mini muffin pan with cooking spray. 2. In a small Mixing Bowl, combine graham cracker crumbs, flour, baking Soda, and salt. Stir with a wire whisk. Set aside. 3. In larger bowl, cream the butter and brown sugar until creamy and combined. Add in egg and vanilla and mix well. 4. Combine the dry ingredients with the wet. Mixture will be crumbly. 5. Scoop dough into mini muffin tins. Fill them full and press down slightly so the Dough is even on top. 6. Bake for 8 minutes and remove them from oven. Using a measuring spoon, press in the centre so there is a well in each cup. 7. Place a half marshmallow into each indent in the muffin cups. Sticky side of the marshmallow down. Let cool for 20 minutes. 8. Place one chocolate kiss on top of each marshmallow. 9. Turn on the broiler. Place muffin tin pan under the Broiler for 1-2 minutes watching the pan carefully. Let cool for about 10 minutes. 10. After cooled, enjoy!

I have a tip! Put frozen raspberry’s in the microwave for 1 minute or 1 min and 30 sec, and mash it up. So it’s like a jam. Then pour it onto vanilla icecream and mix! You can add chocolate chips if you want! But I like mine plain. It’s very good, you should try it! Love your channel 💕 💕
