EAT | 3 Plant-Based Meals for Kid's LUNCHBOXES!

French Toast Muffins
INGREDIENTS
Muffins
- 1.5 cup Simple Truth Oatmilk
- 1.5 tbsp ground flaxseed
- 1.5 tbsp almond meal
- 1.5 tbsp maple syrup
- 1 tbsp nutritional yeast (optional)
-1.5 tsp vanilla extract
- 1.5 tsp cinnamon
- Blueberries
- 9 slices soft bread
Crumble topping
- 1/4 cup oats
- 1/4 cup coconut sugar
- 2 tbsp Simple Truth Organic Plant Based Buttery Spread
- 1/8 tsp sea salt
DIRECTIONS
1) . Preheat oven to 375 F
2) Mix together flaxseed, almond meal, nutritional yeast, maple syrup, milk, vanilla and cinnamon in a mason jar, put the lid on and shake well. Then place jar in refrigerator so ingredients can begin to set
3) In a mixing bowl add all the crumble toppings together until fully incorporated.
4) Slice bread into 4 squares each (should end up with 36 squares)
5) Grease the muffin tin with Simple Truth organic Plant Based Buttery Spread
6) Begin to layer your muffin tins, starting with about 1 teaspoon of liquid mixture to each space, followed by one square of bread, then blueberries (we used about 3 per layer)
7) Add a bit of the liquid mixture
8) Spread about 1 teaspoon (or less) of crumble on top
9) Cover with another square of bread and pack it down well
10) Repeat 2 more times. (Note: You may have left over liquid mixture at the end)
11) Bake for about 25 minutes or until liquid is absorbed and the tops begin to brown
Vegan Chocolate Truffles
INGREDIENTS
- 9 ounces vegan chocolate chips ~1 1/4 cups
- 7 tbsp canned coconut milk (well shaken or blended in food processor)
- 1/2 tsp vanilla extract
- 2 tsp flaxseed
- Raw cacao powder or unsweetened cocoa powder (to roll truffles in)
- Chia seeds (Optional, to roll truffles in)
DIRECTIONS
1) In a small saucepan add canned coconut milk and bring to a simmer.
2) Turn off heat and add in vegan chocolate.
3) Stir until melted.
4) Add vanilla, flaxseed and stir to incorporate.
5) Pour into a glass bowl and refrigerate for 2-3 hours.
6) Once set spoon out truffles and shape into a ball with your palm.
7) . Place each truffle into a bowl of either chia seeds or raw cocoa powder to coat.
8) . Set on a baking sheet in the fridge until firm and then in an airtight container, or a portioned amount directly into a lunch container after rolling.
Plant Based Burritos
INGREDIENTS
- 1 medium sweet potato, finely diced
- 1 package Simple Truth Emerge Plant Based Grinds
- Olive oil
- Salt and pepper to taste
- 1 tbsp Cumin (or more to taste)
- Tortillas
- Avocado
- Salsa (on side to dip)
- Simple Truth Organic Plant Based Sour Cream Alternative (on side to dip)
DIRECTIONS
1) . In a large skillet add oil and set on medium heat.
2) Add finely diced sweet potato, some salt and pepper, and saute until softened (about 5 min).
3) To your skillet add one package of Simple Truth Grinds.
4) . Add more salt and pepper and cumin.
5) Continuously stir and break up the pieces of Simple Truth Grinds
6) Saute until it begins to change in texture.
7) Warm your tortilla and assemble burrito.
8) Add sides to dip.

LOVE IT!!!❤❤❤❤ I also love how you phrased it "more plant based meals" instead of saying your family was going "vegan". Some people get so overwhelmed and think they have to go all or nothing, but every little but helps the animals & the environment so much!! Not to mention, they are usually on the healthier side (and delicious as you have clearly shown in this video!)!! Also, I cannot commend you enough for encouraging / supporting Avery's wish to eat more plant based! That is just so awesome! So many vegan/vegetarians have memories of our mom's saying "yeah right, this is just a phase" or "you eat what I make" and picking around meat, only eating sides, or making our own separate food, for years and feeling like black sheep. You are sending the message that her views matter and that your family is united in not only supporting her, but giving it a try, right there with her!! Seriously makes me so happy I teared up, because even if y'all don't stick with it, it is something all of your kids will remember for the rest of their lives!

@@emmygrace03 it's quite a controversial topic but basically some people think that we shouldn't eat dairy and/or meat products because they believe that all living things are equal & that we shouldn't kill other living things to eat when we can get protein from other sources (correct me on this if i'm wrong) and also that to lessen climate change we should eat less dairy and meat products as they use up more resources and give off more green house gases than vegan food. Then other people believe that we should eat meat because it was the way we were created and also because it had always been said to them since a young age that meat has to be eaten to be healthy even though humans don't
everyone always says like “ I’m so young why do we watch these” but imagine what good mothers our generation will be when we have influences like these.

Verity Lindsay I’m vegetarian, and there are plenty of things you can eat for protein when you don’t eat meat! Eggs are great, and you can make omelets and scrambled eggs too. Milk is also very great for protein, and you can add chocolate and strawberry syrup. Cheese is also great, (because of the milk in it) and you can make grilled cheese, Mac and cheese and plenty other things. Another thing is beans too! Sorry if this is really long, I just want to show people that being a vegetarian in great for the environment, and it is very easy!

Crazy Bridget Yes that is definitely true, but I like having a variety to my diet, I really hate eating the same thing over an over for days on end, you made a really good point though. Eggs are one of my favourite things!

Ha ha. I hear ya! Our second born will eat almost anything I serve (and routinely thanks me for cooking him healthy meals), but the firstborn is attempting to be a picky eater - something I just don't have time or patience for!

Find out what Kroger store is in your area, (it's called Fry's food where I'm from, but it's from the Kroger family of stores) and then download that app and set up an account. There's always tons of Simple Truth coupons in that app and you may use them on top of the store sale price too!

Great point! Plant based can actually be super cheap, especially if you don't but the branded stuff sponsored here. Pick Up Limes just did a video on meals under $2 that are all plant based. She also goes over staples that are inexpensive like rice, beans, oats etc

Yes, plant based versions of butter, cheese, meat, etc definitely are expensive, but a diet of plant based whole foods can be very affordable!🌱💜

If you are aiming for some more plant based options I HIGHLY recommend Morningstar and lightlife products. I bought morning star bacon and it tasted exactly like bacon but it is vegetarian. This might help with those “meat cravings” that you get when you first transition into eating more plant based. I vegetarian so it was definitely a hard transition but there are so many alternatives so it becomes easier!!

Wooo! We're plant based. I love that you have this video! Keep em coming. And how cool that Avery is pushing it. I went vegetarian in middle school and it's been 20+ years so I was super lucky to have parents who didn't act like it was just a phase or anything. So great that you're supportive.

💗 Another great opportunity is life science test prep. My 4th grader loves salads (completely opposite of her siblings). Getting the kids into planting seeds and planting is so fun for all of us and helps my 4th grader really understand what is being taught in science class. Another win, she has little helpers growing her favorite food.

Oh my gosh its crazy to see your kids all grown up. This is a channel I always come back to because I literally grew up watching. As a kid I used to watch all the recipes and hacks and now I'm in college. Its just absolutely insane to me! Love to see you guys going strong!

I made tacos this week using black beans and corn instead of meat! As a recent college graduate (but still pre-professional) sometimes even the simplicity of swapping out simple plant based options instead of meat really helps the bank as well as the environment!

I would love a video about gluten free food items! My family has celiac disease and we always run out of ideas for School lunches.
Best EAT video! My 9 year old son is vegetarian. I always love new ideas! He’s such a little foodie with a huge appetite, so I’m always trying to fill him up and make things he’s never had before. We’ve even made vegan beef-less Wellington’s and fish-less pies, etc.
