    Ive been sharpening knives for 25 years with just two waterstones, 1000 and 7000. All these other grits are unnecessary. If you need to repair a chipped edge, you might want a 300 grit stone also. If want to have mirror like edge then you should use a leather strop with a green honing compound. I do like the plastic pipe ideal to maintain an angle.

    You can also use a leather strop on its own to straighten the edge, but it's probably not necessary on a kitchen knife.

    The paper test is to find knicks in the edge. Once done it needs another couple of passes on the fine stone again to restore sharpness as paper dulls the edge very quickly. Also, save the battery and use an old leather belt if you are that set on the finish. That knife could've been sharpened in a third of the time.

    Yeah my old man who is 78 now you should tell me how we used to get disciplined with a leather sharpening strap when he was young, pretty much the same thing as a leather belt just a little bit wider.

  • @dukecraig2402

    @dukecraig2402

    4 ай бұрын

    @@Dicky98 It's called a strop, and no, you don't want to use a leather belt or anything else that has dirt impregnated in it. I've been shaving with a straight razor for 27 years now and there's some myths about strops with the biggest one being that putting jewlers rouge on it helps, it doesn't, it's the last step in sharpening a razor but it's not the same thing as the other steps which basically is sharpening with finer and finer grit stones, the final stone is so fine if you look at the edge with a 30× jewlers loop it'll look like a mirror so putting rouge on the strop doesn't do anything in that regard except for cut down the life of your strop, the only thing you should ever put on one is leather conditioner, only unscrupulous razor supply outfits sell rouge to put on them, and they only sell it because they know some people believe the myth that it helps. When you sharpen any kind of blade you always push them straight in the direction you cut, not sideways the way you see this guy doing it, yea that'll get it sharp but the edge won't last as long, you'd need a microscope to see them but even with the finest stone that feels like glass there's a series of microscopic burr's along the very tip of the blades edge that are U shaped and face backwards on both sides of it, and that's why you strop a razor flat and backwards, what you're doing is standing up those microscopic burr's straight so they're not U shaped and facing backwards, truth is mankind learned that stroping razors so long ago that they probably didn't really understand what it was actually doing because they didn't have microscopes back then, all they knew was when you stropped a razor backwards on leather it didn't tug on their wiskers nearly as bad as just finishing with the last stone. I never really was very good at sharpening knives, I could never hold the same angle on every pass which this guy's trick solves, so I got one of those Lansky sharpening kits, but sharpening a straight razor is easy because you just lay them flat on the stone and push forward. A good modern stainless steel razor like the kind made in Soligen Germany only needs a final edge put on it once, after that every time you go to shave just a few swipes on the strop on each side and away you go, but you gotta have a stone because sooner or later you're going to nick the edge on the sink faucet or something and have to touch it up, but once you get one properly sharpened and learn how to strop it there's not another razor in the world that shaves like one I don't care how many blades they put in them.

    This is how I was taught and have done for 50+ years. The secret is to never let a knife get dull, then you never need the coarse stone. Another tip is don't use a glass cutting board, or the dishwasher. Finally after sharpening, either run the knife across a leather strap or a fine ceramic rod. This will remove the micro-fine curl at the edge of the blade the is always created by a stone. Tips learned from old timers when I was just a pup.

    A lot of people thinking they're sharpening a knife but there's a lot of room for improvement because they actually are putting a rolled contour to the 2 facets that make the edge. The PVC is a really good and inexpensive way to get it right every time, and get the facets flat instead of rolled. Of course the ones who like to make rolled edges will disagree.

    That is definitely a way of getting consistent results. You really want to try and use the whole surface of your stones. It will greatly improve their longevity. You can practice your profile angle with a stack of coins. The secret, however you end up sharpening, is to be consistent on your profile angle. Practice makes perfect😊

    Too many stones just 300 grit stone will do for the stainless knife. Heres a good idea: sharpen the knife in single stroke then with the other side after that smooth it in a soft wood slab maybe pine of something smooth. To retain its sharpness for a long time soak the knife in BOILing H2O for a minute or two let it cool then let it stay in the freezer over night 4 to 8 hrs max. That's it. . . I am from the PHILIPPINES.

    The tubing cut to clip on the back is brilliant I'm going to use that from now on because it's not easy to consistently get the angle the same on each stroke over the stone I guess there are some guys who are capable of doing that, but just about everyone rolls the edge by changing the angle between the blade and stone. Consistency with that angle makes the difference between mediocrity and superiority !

    The battery honing isn’t a good idea. You have just used the pipe, which IS a good idea, to establish a precise edge, and now you are ruining it with imprecise honing with a metal battery. Use a leather honing block - perhaps with the pipe on the knife, if it doesn’t slide off.

    Seem like a great product. One suggestion is that I would be careful about grabbing the knife like that. People who cook on a regular basis, chefs , and others, who handle knives all the time know how to do stuff like that without cutting themselves. A lot of other people don’t know how to handle knife like that without cutting themselves. Unfortunately, in this age of social media people love to mimic what they see. I would just hate to see someone get cut.
