    Thanks for your guides. Smoked my first ever brisket on a brand new WSM (lol what a choice for first cook). Anyway your vids have been great as guides!! Something that I ran into that I may need some help : WSM 18” Foil covered water pan (no water) 16# pre trimmed Prime brisket (from costco) -Trimmed it but didn’t weigh. Smoked at 250. Checked on it 4 hours in, seemed to be doing well. I had a probe in the point (as i’ve seen some say it cooks faster due to higher fat content). It was @145 or so. nothing seemed to be drying out or burning so covered and then waited to get past stall at 170-175. @170 I opened to wrap / foil boat it. I proved the flat and it was at 190!!! at this point it was still probing like a well done steak. So i immediately took it off, foil boated it, and put it back in to finish. Changed the probe from Point to the midpoint of flat. At 203 I checked it and flat was still pretty hard. Noticed a LOT of moisture in the boat. Point was probing at 187 but it was like butter. Decided to take it off and rest for 10 hours at 150. Point turned out perfect. the front half of flat was COMPLETELY overdone (not burnt though). Behind the front half towards point was great though. I didn’t spritz at all. and only checked it those 3 times. I don’t understand how the flat was temping so much higher than the point. Then I found out that there are hot spots on towards the outer portions of the grate on a WSM, due to how the heat distributes. Come to think of it, the brisket barely fit at first and the very front part of the flat was at the edge. The back of the point was at the edge also but i guess it can withstand more heat due to ++ fat??. i’m thinking maybe the front of the flat was cooking at a WAY higher temp the whole time since it was at the edge of the grate. Should I not use the water pan as a heat diffuser that sends heat up the sides? that way you won’t have hot spots? but if so do you then cook fat side down as now you have direct heat from the bottom? Or did I mess something up when noticing the temp difference of 20 degrees when checking? Might be a good video to make. what to do when different parts are temping at way different temps. Thanks again!

    Absolutely loving your videos, your explanations are so clear and consise. I remember when I was getting into bbq about a year ago and how long and rambling some of the videos would be. You're really changing the game bro. One thing, have you thought about using freshly ground black pepper? I feel like that just elevates the brisket to another level as provides those vibrant citrusy piney notes, especially as someone who loves pepper?

    Probably a stupid question, but this summer I want to get into BBQ too after watching waay to many videos about it, but I am still not sure about one basic thing: I thought the most basic form of smoking is the "offset" - smoker, where the fire burns in a seperate chamber and the smoke just "grazes" the meat on its way out to the chimney. the tiny smoker in the video (I want to get one like this too) tho is basically coals with the meat directly above it, so it gets the full smoke load for the entire cook, and sometimes I read that thats actually bad because the smoke can have some undesirable properties, especially cancer related stuff? Or is that only happening when I burn normal firewood and it gets too hot, but with coals just "glimmering" its ok?

    Hey, Ant, I first encountered your videos whenever you were critiquing those other guys Adam, whatever his name is and you were talking about the brisket. It looks like you can cook quite well. I think that the cinematography and the editing and the sound quality in your videos are quite good , the only suggestion I would make is that whenever you’re making a video about something for beginners, you might want to show more of how you’re actually doing what you’re doing because it’s for beginners. And quite frankly, cooking a brisket, unless you’re doing it hot and fast , it takes a long time so if someone doesn’t have the patience to sit through a 30 minute video, how in the world are they gonna have the patience to do a brisket?

    Dude. Mixing metric and imperial? And you still got your division wrong. Painful. Also, useful rule of thumb: salt everything by weight using 1% salt. If you convert your weight to metric, you get 40g salt / 4400g =0.9%

    Haha yeah you're right I flipped the ratio. So thanks for the headsup, its fixed now. I literally just eyeballed it like I always do and it came out to dang near 1% that's pretty awesome lol good rule of thumb, but I'd caution you on saying "everything" because a lot of cuts have bones which will affect your calc.

    thanks for the concern! they sent it to me with no strings attached, it wasn't a this for that scenario. I live in Nashville so I actually buy my meat from porter road pretty frequently. Just gave them a shout out as a thank you and also to share with all of you because its my favorite place to get meat.
