MEATBALL INGREDIENTS
Ground Beef
Ground Pork
Day Old White Bread
Bread Crumbs, plain
All Spice
Nutmeg
Onion
Garlic Powder
Salt and Pepper
White Pepper
Ground Ginger
Egg
Olive Oil
Porcini Mushrooms
Milk
Butter
Flour
Beef Broth
Sour Cream
Worcestershire Sauce
Soy Sauce
Dijon Mustard
Fresh Curly Parsley, chopped
MASH POTATO INGREDIENTS
Yukon Gold Potatoes
Unsalted Butter
Salt
Milk
Full Cream
CREAM CORN INGREDIENTS
Unsalted Butter
White Onion
Frozen Corn (do not thaw)
Heavy Cream
Maple Syrup
Dry White Wine
MEATBALL COOKING METHOD:
1. Rip the day-old bread into pieces and place it into a bowl. Pour milk over the bread making sure the milk soaks into the bread.
2. In a large bowl, mix the beef and pork together until fully incorporated. Make a small well in the beef/pork mixture adding 2 eggs to the well. Add spices into the mixture along with Worcestershire, dijon mustard, and dry bread crumbs then mix together.
3. Add in the milky bread crumbs and mix them together.
4. In a large frying pan, add oil and heat over medium-high heat. Add in butter once the oil begins to slightly bubble.
5. Roll the beef/pork mixture into equally sized balls. Add to the frying pan until meatballs fill up the pan. Cook until the meatballs are golden browned.
6. Place finished meatballs onto a paper towel to drain.
7. To the same frying pan, melt butter and add in the mushrooms, salt and pepper, and chopped onion. Saute for a couple of minutes.
8. Once the onions begin to look translucent, add 1 Tbsp of flour and mix until combined.
9. Gently add in beef stock and stir until a slight slurry forms. Add a little more beef stock and keep stirring.
10. Turn to medium heat and add in a glug of Worcestershire sauce, and soy sauce, and add in a good portion of the meatballs cooking until ready to serve.
CREAM CORN COOKING METHOD:
1. Melt butter in a medium pot over medium heat along with chopped onions, and frozen corn. Mix around.
2. Add in dry white wine barely covering the corn. Add in a glug of maple syrup and reduce.
3. Once the wine has reduced a bit, add in heavy cream, and a pinch of salt and mix them together.
4. Add the mixture to a blender and pulse it once or twice. Add in another 4-5 knobs of butter and pulse another one to three times.
5. Add corn to a bowl and serve.
MASH POTATO COOKING METHOD:
1. Peel and chop the potatoes. Boil in salted water.
2. Once the potatoes are tender, mash and mix together with butter.

So it's not worth sticking around to see if you will enjoy it. Just accept works shit and get a better paying job that hopefully doesn't make you want to die. Best advice I can give

As a Swede (Obligatory) I think Matty did quite well. The meatballs themselves looked damn good. Not like grandma used to make em, but definitely good The sauce is usually cream based and served WITH the balls, instead of balls in a stock-based sauce, but it would still delicious Swedish meatballs are also always served with Lingon-berries, either as a jam or lightly macerated Really liked

did this tonight for my family and lemme tell you they have never loved a dish that i did so much (i did some changes on the recipe giving some of my twists) it turned out beautifully

Best Swedish meatballs I've seen on YT except French Guy Cooking's visit to Stockholm. Have no idea why most seems to omit the spices that make them uniquely Swedish (nutmeg, allspice and often cloves). Only the sauce was flawed - it's done by just putting heavy cream in the pan after frying the meatballs. Salt, pepper, some soy sauce. Reduce until thick. Done - serve with meatballs, mashed potato, lingon berries and pickled cucumbers. And the olive oil, porcinis and stuff... obviously. And not using cast iron. If someone reading this has a hard time finding lingon berries, the solution is IKEA.
This is one I think I will actually try to make here at home.

My grandma makes this exact meal for me. I feel the exact same way when she drops a batch off.
The Midwestern US Polish grandma secret is to add Campbell's Cream of Mushroom soup as the mushroom base Idk if she understood that Cream of Mushroom soup adds MSG specifically but these were the favorite contested items at any gathering she cooked for Never learned her specific recipe (I was a non cooking 9 year old when she died) but I can say for a certainty the addictive savoriness truly comes from having MSG lol Which I have learned to harness and all my friends and family are astonished when I cook and it's super delicious And I tell them what I do (just buy seasonings with MSG or add some to seasonings without) but they all just handwave it off like whatever I'm not doing that
MATTY uses so much butter in everything he does but he took it to a whole new level in this episode.

probably the most entertaining cooking show actually. he cooks great stuff and is also a comedian...and then the edits are great. should actually have way more subs on that merit alone
In sweden we use ”gräddsås” creamsauce and ”lingonsylt” lingonberryjam. Just some salt and black pepper in the meatballs 👍🏼😛
