My mom was a single parent, and money was usually pretty tight, but she always made everything come together and seem magical for special occasions. For my 9th birthday, she scraped up enough for a strawberry cake mix, icing, and sprinkles. They were marked down and stacked together, like it was meant to be. I remember her worrying over whether it was enough/good enough, and I ended up proclaiming that I loved it so much I wanted the same exact thing next year. I’m 27 now, and it’s become an absolute tradition. Circumstances have changed so much, but my sweet mama still happily makes me my strawberry cake….albeit slightly fancier now lol. Long story short, this video actually brought back so many good memories and gave us a new recipe to try this time 💕🍓

Your mom sounds a lot like mine. She raised three boys on her own and there definitely wasn’t any extra money but she always made the most normal everyday event seem special. Friday’s was always butter pecan ice cream mixed with A&W root beer floats and made my favorite “fresh apple cake” for my birthday and really anytime we all just needed something a little special. Moms are incredibly special!

For the Cake: ▢ 2 ¾ cups all-purpose flour 330g ▢ 2 ½ teaspoons baking powder ▢ 1 teaspoon salt ▢ ¼ teaspoon baking soda ▢ 1 cup unsalted butter softened (227g) ▢ 2 cups granulated sugar 400g ▢ 4 large egg whites room temperature ▢ 2 teaspoons vanilla extract ▢ ½ cup whole milk 120ml ▢ ½ cup fresh strawberry puree reduced (see Notes) (120ml) ▢ pink food coloring optional For the Strawberry Frosting: ▢ 8 ounces cream cheese room temperature (227g) ▢ 1 cup unsalted butter room temperature (227g) ▢ 1 teaspoon vanilla extract ▢ pinch of salt ▢ 6 to 7 cups powdered sugar sifted (720g-840g) ▢ ¼ cup fresh strawberry puree reduced

BTW... if you use strawberries grown in your garden, the cooking time for the reduction will be far less. Those commercially grown strawberry varieties are huge and FULL of water, while most garden varities are smaller, with a much stronger strawberry flavor.

I made a cupcake version of this cake! I followed your instructions and recipe but just used cupcake tins and papers. Baked each 12 cup tin for 20 minutes and used the same frosting. SO BONKERS GOOD!

I’m so shocked how much sugar you use (in the US) here in Europa we maybe would use half amount of sugar you’ve mentioned or even less. That would be too sweet for me! But everyone’s taste is different.

I would say that for marketing people adds a lot of sugar since people always wants sugar in cakes, for me my mom has always baked cakes with half the amount of sugar, and I always wondered why so many cakes have so much and my mom always said " for selling the amount needs to be more since that's what people want, even if it is too much for us" I totally get what you are saying, we are used to bake cakes with a little amount as well, but for the public that would be the usual I guess

I needed some kind of inspiration to bake a cake for Mom's birthday - didn't want the same ole' recipes. I came across this video and loved you and loved this recipe. I followed it to a T and it came out perfectly! The smell of the freshly reduced strawberries, the taste of the cake, the frosting...it was a hit!

Love that you use your still functional cake strips ❤ Not wasteful and like a normal kitchen. I prefer that to youtubers where everything needs to be picture perfect and brand new. It just shows that those cake strips are quality. After all those delicious cakes you baked with them they are still doing their job.

Thanks for mentioning the raspberry juice to give it more color. Now I'll be questioning if anyone's strawberry cake is pure and thoroughly full of strawberries. As a person living with allergies people tend to leave the smallest details out thinking it's harmless and then out comes the EpiPen or death. This is why I can't eat dessert at people's houses. I hardly ever leave comments on KZread videos, but I am compelled to say this: John, thank you so much for sharing your passion for baking with all of us, and even including metric measurements, that means so much and makes things so much easier! I really really REALLY appreciate that!Your recipes are awesome and simple to follow, you explain things wonderfully, and every one of your recipes I've tried so far have turned out great (I've made hot cross buns, cinnamon rolls, peanut butter chocolate bars and most recently, this one). This strawberry cake was a hit at my work when I made it for my boss's birthday! It wasn't strawberry season so I used jam instead, it still tasted amazing, but perhaps a bit sweet for me personally. I did the DIY cake strip method to bake my cakes, and never in my life has any cake I baked come out as perfectly as they did this time. They were moist, flat topped and baked super evenly! I now binge watch all of your videos, not just to learn about baking/cooking, but also because they're so calming and even therapeutic, you have such a wholesome and positive energy that makes me feel so happy 😊 Thanks again for making such lovely content. I loved the texture and natural strawberry taste of this cake! 🍓 I halved the recipe and used 1 whole egg rather than 2 egg whites because I didn’t mind for the color of the yolk to mix with the pink. My cake was still a nice color because of the red food coloring💗 I didn’t make the frosting and the bread was still delicious all on its own 😋 Thank you for the recipe!!💕
