    My mom made porcupine meatballs when we were young! Hers were made with a cream of mushroom sauce and served over rice! So good!

    Awesome meal ideas!! I did a quick skillet meal last night that was really tasty. I combined 8 oz. cooked chicken breast, a package of Uncle Ben's Spanish Ready Rice, a drained and rinsed can of black beans, a drained can of corn, an undrained can of fire roasted tomatoes (Rotel would also work), and 1 cup of salsa. I added the first four ingredients to the skillet and cooked over medium heat for about 5 minutes until they were heated through. I then added the tomatoes and salsa, reduced the heat to low, and let simmer for 10 minutes. Garnish as desired with things like shredded cheese, scallions, sour cream, etc. It made four generous servings. I just ate mine in a bowl, but this would also be a great filling for burritos, taquitos, etc.

    That pot pie is perfect for a "use it up" fridge clean out. You could add potatoes and celery to it to make it go farther and even add a small bell pepper. My short cut would be cream of chicken soup for the gravy because I am lazy. I always have celery and bell pepper left because hubby has this thing about them but I have been sneaking them in his food in small finely chopped pieces for years and he gobbles it up. We have to get creative with healthy food in our cooking when you have picky eaters (even for the big kids). 🤣🤐Love your ideas.💕

    Thanks for the feedback! I like to film that way, but in a busy family kitchen it’s sometimes easier to film “b roll” and add a voiceover later. Evenings get kind of crazy with three kiddos in the house!

    Love that first meal!! It's so versatile. You could use whatever ground meat you have or sub beans/lentils, add any variety of veggies, throw in any kind of sauce, etc. I will definitely be playing with that over the next couple of weeks :)

    You've said before that you didn't have a need for an Instant Pot, and I get it. I love mine. Well, it's an off brand but... in your situation where you forgot to put chicken in the crockpot and forgot to pick up a rotisserie chicken? I can have around 8 chicken breasts cooked and ready for shredding or chopping in 15 minutes from frozen. Love that flexibility.

    I used a regular stovetop pressure cooker for years and it was GREAT for cooking things right out of the freezer. I finally caved and bought a 3 qt mini Instant Pot a couple of years ago because it had the ability to do cold start yogurt, This size fits our family better now and it's definitely more versatile with the other built in functions.

    Love chicken pot pie. I add a touch of white wine to the veg before the broth and cream. For seasoning I like poultry seasoning in addition to S&P. Great recipes - love one pan dinners!

    The chicken and potatoes sauce is thin because you used half and half instead of heavy cream . Cream will rapidly thicken as it reduces, half and half will take far longer to thicken and reduce. You could fix that by making a roux with some flour first or adding a corn starch slurry towards the end.

    I can't get to the grocery store very often, I have stopped using cream and some milk products. I've switched to frozen cream cheese or evaporated milk products. The recipes aren't as rich but I'm making due with what I have on hand. When you are replacing chicken breast with chicken thighs take the fat off your chicken thighs first before starting to cook. Keeps things from being to greasy.

    My boys will love the pot pie dish, and we keep those extra chicken cans in the pantry... my youngest loves to experiment with pot pie variations if I keep the cans on hand, he'll make dinner. Chicken pot pie soup is a staple in my pantry, too. Have any recipes for that?

    I bought a similar color for a friend last Christmas. It was fairly affordable, a brand called Bruntmor, off Walmart. It was 6.5 qts and about $65 around Black Friday. I believe Martha Stewart has a collection in a similar color as well.

    It's half whole milk, half heavy cream. If you are in the UK, it's half cream.
