🔽Ingredients for 1 onigiri
1. Tuna × mayo × bonito flake onigiri
150g (5.3oz) cooked rice
1/2 canned tuna, drained
1 tbsp mayo
1 tbsp soy sauce
1/2 tsp bonito dashi powder
some bonito flakes
*recommended to make 2 onigiri to use a whole can of tuna
2. Salmon tartare onigiri (negi toro)
150g (5.3oz) cooked rice
nori (optional)
1 tbsp salmon tartare paste
■Salmon tartare paste
100g (3.5oz) smoked salmon
1-2 tsp soy sauce
wasabi
spring onion
3. Kombu onigiri
150g (5.3oz) cooked rice
nori (optional)
1 tbsp seasoned kombu
■Seasoned kombu
1 piece of kombu
150ml water
1 tbsp sugar
2 tbsp soy sauce
2 tbsp mirin
2 tbsp sake
1 tsp vinegar
4. Shrimp mayo onigiri
150g (5.3oz) cooked rice
nori (optional)
1 tbsp shrimp mayo
■Shrimp mayo
6-7 boiled shrimps
1 tbsp mayo
1 tsp soy sauce
1 tsp mirin
1/3 tsp sugar
5. Fried rice like onigiri
150g (3.5oz) cooked rice
1/2 egg, scrambled
1/2 tsp Chinese chicken essence powder
1/2 tsp sesame oil
salt and pepper
spring onion
*recommended to make 2 onigiri to use one egg
6. Grilled salmon onigiri
150g (5.3oz) cooked rice
nori (optional)
1 tbsp seasoned salmon
■Seasoned salmon
1 salmon
1 tbsp sake
1 tbsp mirin
1 tbsp soy sauce
some salt

🔽Tips
1. When your onigiri falls apart
Tip1
Use Japanese rice or sushi rice. Easiest way is get sushi rice from your local supermarket :)
There is rice for making mochi in Asia which is called “sticky rice” or “sweet rice” or “glutinous rice”. This type of rice is not for making onigiri.

Tip2
Don't put too much water or too less water when you make rice.
If you use a pot to make rice, put 200ml (0.85 US cup) water for 1 rice cup (180ml = 3/4 US cup)
If you use a rice cooker, just follow the measuring line
Tip3
If the onigiri is too small for your hands, it would be difficult to press hard. If it feels hard to press, use 200g (7oz) cooked rice for one onigiri instead of 150g (5.3oz).
Tip4
When making onigiri, make sure you use warm rice. If it's cold, it's dry and doesn't hold together :(
If it’s cold, microwave rice with a lid for a while. It will be warm and sticky.
Tip5
If you put too much filling, it would also be difficult to shape onigiri. Put less filling :)
2. When the rice stick to your hand
Tip
Put the hands in cold water before making onigiri. If your hands are warm and dry, the rice sticks to your hands. Cool your hands down and make them slightly wet!

★About seasonings
--Substitute for Mirin and Sake--
If you can’t find mirin or sake in your city, you can substitute them like this👇
For 1 tbsp mirin use either:
1 tbsp sake + 1/2 tsp sugar
or
1 tbsp white wine + 1/2 tsp sugar
For 1 tbsp sake use:
1 tbsp mirin
or
1 tbsp white wine
It won’t be exactly the same, but still works 😋

I got a feedback that “sticky rice” may be confusing to some people. There is rice for making mochi in Asia which is called “sticky rice” or “sweet rice” or “glutinous rice”. This type of rice is not for making onigiri. Oh! Since you live in Spain, there's a brand of rice called Brazal, that is sold in el corte ingles, that claims to be good for sushi. It has a yellow packaging. Since I saw that you tried to make onigiri with regular white rice once and it didn't work, It would be interesting to see if this one is what it claims to be. It would be amazing if it works because it's more affordable than sushi rice, but I don't have my hopes up

I love kombu onigiri! I should have it more often, but I'm an impatient cook and it takes so long to make 🙃😅 but when I do, it's always a treat! 😊

I love onigiri and tried making it after your last video. Even though I knew which rice to use and had that rice on hand, somehow I managed to cook a pot of basmati instead. It was so disappointing!! They did taste good, but there was no hope of them holding together. I will try again!

I have done this sort of thing before, it's so easy to do! 😂 my brain says "you need rice" and I just grab the first one I see in the pantry without thinking! I've had some very interesting risottos and curries in my life 😂❤️

I bought 2,5kg of sweet rice by mistake the other day at the asian supermarket. I was so bummed out when I realised my mistake once I got home, because I really wanted to try to make your onigiris. I'll have to go back and get the right kind of rice next time. Also, thank you for these new recipes, they sounds amazing!

Sweet rice is great for desserts, and of course mochi. It's hard to find whole here, but I recommend making making homemade mochi with it and it's great for Horchata (Mexican rice water).

dont be bummed out. glutinous rice is great for making lots of east asian desserts! like the comment above me mentioned. you can make mochi and horchata or make vietnamese coconut sticky rice or thai mango sticky rice!

nice video, i've been making onigiri for a few weeks and i love it. I'm from chile, and we don't have many of the ingredients, but we have tons of seafood so i've been trying out the local fish and see what does or doesn't work. I have a question, do japanese people eat onigiri with soy sauce? i prefer the soy sauce to salt, but only a light coating, i mix sesame oil, soy, and rice vinegar in a small spray container and carry it when i make sushi rice

Hello! I have a small question about seasoned kombu - If you buy it rather than make it from scratch like you did, do you still need to heat it up in a pan and make it all saucy? Or just add sesame seeds? Thank you! :)
I've made onigiri a few times but it always seems to be kind of "dry". I'm using sushi rice that I cook in a rice cooker. Am I doing something wrong?

Add more water to your cooking perhaps ? You don't want it just cooked but also a bit overcooked so it's mushier and more manageable

I have to be honest, whenever I try to make onigiri or makizushi, I usually get hungry & lazy and just throw the rice and other ingredients into a poke bowl and eat it without shaping it into anything...
I think calling japanese/sushi rice, sticky rice, can cause confusion to some people because there's also sticky rice which is not regular sushi/japanese rice. Because sticky rice is the one used for mochi, or the thai one eaten with hands. Japanese rice is stickier than regular european white rice, but it's not sticky rice.
