Ideally 8-10 weeks. I have gone longer but meat gets tuff. Pressure cooking fixes that. Instant pot fixes that or if u have an older layer. Sometimes life gets in your way and things get delayed. On a side note they keep growing and u end up with more meat. Processing birds is an long day if done alone.
