Easy Homemade Blueberry Cobbler -- Cast Iron Wednesday

BLUEBERRY COBBLER
3 C fresh blueberries
1 lemon
1 C flour
3/4 C sugar
1 egg, beaten
1/2 C plus 2 tbs melted butter
Wash and drain berries and place in 8x8 baking dish or 8 inch cast iron skillet.
Squeeze lemon over the berries.
Combine flour, sugar and beaten egg.
Stir until mixture is like a coarse meal.
Spread over the top of the berries.
Drizzle melted butter over the top.
Bake at 375 F for roughly 30-35 minutes.
Cool.

    That sure looked good.. Most things taste better cooked in cast iron. I did a blueberry upside down cake in a cast iron frying pan a few weeks ago. Thank you for the great Cast Iron Wednesday, Helga

    You can do anything in cast that you would any other pan. Because it is cast and heavy, you don't need to use near as high a heat. So learn about your temps and they vary from an electric stove which is harder to control than a gas stove. Make sure it is seasoned well and it will be the best nonstick pan of your life! Check out the Cast iron Wednesday playlist as there's tons of dishes there done in cast iron and may give you more inspiration, and i also have a vid on seasoning cast iron as well if you need it.     Helga, it is like you read my mind. I have some blueberries in the freezer and thought I would make some blueberry lemon muffins for my daughter for school. I have not made blueberry pie or jam but I know it would be delicious. Of course you got to pick your own beautiful blueberries and that was so much fun to see. Your cobbler looks amazing and I agree lemon goes the best with blueberries. I also love blueberry pancakes. Oh my I think I am hungry typing this comment sorry.     looks good . the cobbler we get in the uk is very different. it has scones on top making it look like a old cobbled road . going to try it your way next time

    That is one of the ways, for sure. I find many of the cobblers to be heavy and this is lighter and celebrates the fruit more. We also make a buckle, which is similar. On the other hand, I adore good scones! Thanks for watching!

    Perfect! You'll love it! Remember to turn the dutch a quarter turn every 10 minutes, and turn the lid opposite a quarter turn at the same time to have even cooking!

    Oh my god, Helga! Blueberry cobbler is one of my favorites. They're Damn good....but I didn't realize you make it so easy. Wow, I'm gonna make this this weekend when my kids come over. They love this cobbler. Would store bought blueberries work just fine ?

    Thanks, Josh! Yes, store bought berries should be fine. They might not be as sweet, but as long as you make sure the topping is spread evenly over them, when you eat it you get the topping along with the berries and that gives it enough sweetness! I hope you all like it!

    Woo! I was looking for a blueberry cobbler recipe that I can use with my 8" Cast Iron Skillet!! THANKS!! I was thinking of doing this with Jiffy Corn muffin mix, instead of the flour, have you tried it that way before?? Also is that all purpose flour? Thanks again! = )

    I'm sure you coukd use the Jiffy mix fine, but it will give it a completely different flavor and texture. Should be good, though. All purpose flour was used. Thanks for watching!

    Thank you! Yes, there's a couple of ways to make it, and one that's similar as well is called a buckle. But I like this because it's not so cakey and heavy and celebrates the fruit more.

    Was that a 12-inch skillet you used in the video? I tried with the 8in and it was too small. The butter didn’t have enough room to spread out and the crust ended up way too greasy
