EASY Homemade Baking Mixes!

Having these homemade baking mixes on your pantry shelves will make life so much easier! You control the ingredients and you control how many servings you keep stocked. It's an excellent step towards decreasing your reliability on the commercial food industry.
Muffin Mix Ingredients - 4 servings of approx. 1 dozen muffins
8 cups all purpose flour
1 cup sugar
3 tablespoon baking powder
3 tsp salt
To prepare approx. 1 dozen muffins
2 1/4 cups muffin mix
2 eggs
4 tablespoons melted butter
3/4 cup milk
Whatever other ingredients you want ex. chocolate chips, mashed banana, etc.

Basic Cookie Dough Mix Ingredients - 4 servings of approx. 1 dozen cookies
6 cups all purpose flour
3 cups brown sugar
2 cups white sugar
4 tablespoons corn starch
4 teaspoons baking soda
4 teaspoons salt
To prepare approx. 1 dozen cookies
2 3/4 cups dry mix
3/4 cup unsalted butter - room temp
2 eggs
1 tablespoon vanilla
Whatever other ingredients you want ex. chocolate chips, m&m's, nuts, etc,

    Sorry I didn’t include the baking temps and times in the description. Here you go! Cornbread: 400° for 20 minutes Brownies: 350° for 23-30 minutes depending on pan size Cookies: 350° for 10ish minutes Muffins: start at 425° bake for 5 minutes and then without opening the oven door, drop to 375° for another 10-12 minutes. This is how I bake all my muffins.

    Hi, in the cookie mix you have already the sugar. So how come you mention mix butter and sugar till white. Were and how much sugar? Getting confused as you can't take out sugar 😂

    I am 74 and have made my own cocoa mix for many years. I combine 4 cups of organic sugar and 6 cups of organic cocoa. I put the sugar in a container and sift the cocoa into it, then just stir the 2 together. I keep it in a ceramic crock. To use, I add a heaping tablespoon to my mug and add about a half inch of scalding hot water and stir well. I fill the mug up with 1% milk and microwave to the temperature I desire.😊

    For brownies, add 1 tablespoon of instant coffee to the dry mix. You can’t taste the coffee but it deepens the chocolate flavor. Great video thank you

    Great video! Tip for measuring flour: Do not scoop with the measuring cup; you’ll end up with more than you need by weight which will make your baked goods too dense or dry, depending on what you’re making. Use a spoon to fill the cup to overflow and then level it off with the flat edge of a butter knife. I learned this technique from my grandmother.

    That is the best old school method. But the new way is to measure in grams on a scale...oh my goodness it really makes a difference. So much more accurate.

    There’s always an ‘I gotta be one up’ comment and that one would be it.... for these recipes it doesn’t matter if you scoop the ingredients like that.. evidence for such- just look on the internet for those recipes... they’ll all have slightly different quantities of flour.... for the bulk recipes you demonstrated... I wouldn’t stress... scoop away!! 👍

    I've been using the Make a Mix cook books for decades. One of the biggest things I like is the taco seasoning because I control the salt and no don't add sugar. Love homemade mixes!

    I now just don't even measure my taco seasoning! I just sprinkle salt, pepper, oregano, cumin, onion powder, garlic powder, paprika, and a tiny bit of chili powder on my meat after it's browned. I add a bit of water and simmer for a few minutes.

    For fine sugar, put regular granulated sugar in a blender or food processor. Whirl until you achieve the desired fineness. Beware: stay with the machine cuz if you whir it too long, it becomes powdered sugar.

    Bio engineered gravy mix also,No thanks I make scratch gravy .. taco seasoning I make,chili seasoning I make,cocoa I make. Pineapple upside down cake ,Easy from scratch... That's why as kids we ate beans,liver,Lima beans,onions, oyster stew, homemade soup,Oh & homemade bread... Cinnamon rolls... Mom sure could cook Age 104,Oldest sister 81. We all still here ,all 10...     A tip to extend your shelf life freeze your flour & cornmeal for 3 days it will kill any meal bugs that maybe in the flour and cornmeal.

    The jar with the veggies on it was sold at Walmart in late 70s and early 80s in usually sets of 3 or 4 as canister set. ARC France is their "Pyrex" style company.

    I,use my canning funnel all the time! Even when I make soup, it’s the absolute easiest way to fill my tall containers, it just minimizes the mess.

    I do the same thing, dry ingredients, for my biscuits. The recipe I have calls for self rising, which I almost never have. I have the 2 cups of all purpose, 3 tsp of baking powder and 1/2 tsp salt in a container. This is the dry ingredients needed for one batch of biscuits. I have 3 containers in my cupboard at all times. When it's time for biscuits, grab one container and in about 10 minutes their ready for the oven. Thank you for your "grab and go" recipes.

    I have made hot cocoa mix for many years for Christmas gifts. Everyone really loves them. I’ve also made Chai Tea Mix, Brownie Mix & Chex Mix. I used to do a lot of baking but I’ve got back problems & these are so much easier & less time consuming. They go together very quickly & I put the mixtures in pint size or quart size jars depending on the size of the family. I’ve been married 48 years & I’ve done homemade gifts ever since I was first married. People appreciate homemade gifts so much.

    For the muffin mix, you could take this all the way using powdered milk, powdered egg, and powdered butter. People who have freeze dryers could even make their own. When you have powdered fats of any kind, it reduces the shelf life a bit but it is much nicer to have a just add water mix. To give them as gifts it is nice to vacuum seal them in canning jars.

    Someone may have already said this, but you could put the sugar in a food processor or blender to make your own fine sugar for your cocoa recipe. I will definitely be trying some of your ready mixes. I need convenience with my busy lifestyle and like you, I want quality ingredients. You are a delight.

    That would be wayyy better than powdered sugar, since it has cornstarch in it. I've used my blender to make fine/powdered sugar, and yes that works just great!

    I grow my own cocoa but I thought I would let you know how it is red vs the brown or black natural cocoa ...Cocoa powder contains an antioxidant called anthocyanin, which is pH-sensitive, meaning it reacts to acids and bases. When raw cocoa powder reacts with acidic ingredients such as buttermilk and vinegar, it turns dark red. This is how they get the red color and red cocoa is used most often to make red velvet cake ..or to make red colored chocolate frosting

    @@faithandarrowhomesteadno, I have autoimmune issues that I control with a very low carb, sugar-free, grain-free diet. I actually show inflammation markers on bloodwork when I’m eating carbs versus not having any inflammation markers when I’m not eating carbs. I just eat the foods that don’t make me feel bad.

    The dutch cocoa process removes the majority of the acidity of the cacao. It results in a cocoa being mild and is the best for baking.

    Really nice video! For finer sugar just blend it in the food processor. Maybe add all the hot cocoa ingredients in and mix them up at the same time.

    Such great information. This is valuable for preppers, making stock up food supplies from base ingredients, making bisquick, making jiffy cornbread base etc from bulk flour. Bulk ingredients to store. I have stocked powdered eggs, milk, flour, corn meal. All purpose flour, corn starch. Baking soda. Baking powder, bulk pepper and salt. It's good habits to start stocking these food items nowadays.

    I never thought about it from a prepping standpoint. I would definitely store these in Mylar bags with oxygen absorbers if that’s what you’re going for so they last longer on the shelf! Thanks for sharing your perspective :)

    Here, in Australia, we can buy the red mill flours, but they cost between $8-13 Australian dollars for 500g! Other than almond flour, any label, it is the most expensive flour we can buy. Luckily we have local millers who make wonderful flours and they’re affordable, and even available to the home cook in large quantities to save even more money. We however can rarely find very low protein (cake) flour. Our most available, supermarket brand, flour has recently (within the past 5 years) introduced flour for cakes and sponges, flour for pizza and both plain and self raising, flour. these however are often not available, so we use the replace a small amount of plain flour with corn or potato flour.

    If you are interested in having a finer sugar for your hot chocolate mix, you can place granulated sugar in the blender. You can blend this until it turns into powdered sugar as well.

    Love your videos😊 You’ll think this is weird, but I’m dairy and egg free. I don’t use the same recipes that you do (or I modify them), but I do exactly what you say and use the ingredients I feel comfortable with to make mixes! I enjoy the concepts of making your own and having control of the ingredients that my family eats also saving money 😂 Also love the jars😊 I do use powdered oat milk, powdered coconut milk and powdered vanilla(expensive, but you use 1/8 of liquid.) You’ve inspired me to try making a muffin mix!

    The gallon size small mouth jar is an awesome find! They usually sell new for around $15 to $20. It is a higher end Italian company that has been making glass since the early 1800’s. Not that I am saying it is antique as they are still making them today. The company is Bormioli Rocco. And I love them and have a few also. Another good brand with the wire bale lock is Le Parfait jars. I like those also. Great video!!

    I have made brownies from your mix twice now. And they turned out amazing The mix was a little dry both times so I added about 2 tbsp of milk before I bake them and oh my gosh, they don't last 2 days in our house. Thank you so much for all of these

    Thank you so much for sharing all of these wonderful pre mixes. I make my own homemade pancake mix and we go through it SO fast! Helpful hint for you in the future~write your recipe directly on to your jar in sharpie and cover in tape. It will stay until you remove the tape! This just saves the extra step of having to write it on paper first. BTW, my pancake mix requires only adding water and maybe a shot of vanilla should you desire.

    If you have a Cricut, you could make the cutest labels with the ingredients and directions. I made farmhouse labels for my glass containers, that hold my flour, sugar, brn sugar, powdered sugar, pancake mix and rice. So cute.

    A good homestead club of trusted people could be organized in the neighborhood or at a local church, and could share the expense of things like a circuit or other expensive appliances. You could even go all the way and start a homestead co-operative, maybe hunt down some tax breaks and get some legal protection for large purchases. A church kitchen can be a good neutral territory to meditate personality conflicts, and depending on your area might already have some industrial grade, commercial kitchen appliances that can prepare for in bulk for long term dry storage or freezing. The Mondragon co-operative in Basque Spain was started by a priest and local farmers and now is one of the biggest businesses in Spain, while providing unemployment protection and lifelong job training to it's employee-owners. The power of community and shared vision was the secret super power our ancestors used to survive the hard times. It's the main reason the powers at be try so hard to turn us against one another, despite average people having way more in common than not. God bless.

    Making homemade marshmallows is SOOOOO BEYOND EASY!!!!!what I did with my girls when they were young was.......I would INVOLVE THEM in making the march Mallows & as soon as Mommy had them poured out on parchment BUT before they would finish setting up & cooling { nice & thick}...........I would have all the special colorful sanding sugars PLUS the very sparkly clear but iridescent sanding sugar and let them decorate . Then when they went out to play in the snow; I had them choose their nice huge hot Cocoa mug to use with their hot cocoa .....and I would have them turn their mugs upsidedown and after dipping their mugs in powdered sugar to aid in preventing sticking......use their mugs like cookie cutters atop their marshmallow section, after they cut their "marshmallow topper" I then filled their mugs with Cocoa they LOVED having their 1-2 inch THICK topper placed atop their mugs to watch their colorful treats melt & sweeten their cocoa.

    Salted vs unsalted butter is not going to make a difference in baking like people think. Salted butter is not salted enough to supply the needed salt for baked goods. Use salted butter. Add the salt. It’s perfectly fine.

    Personally I love salt and I often use salted butter and keep the salt from the recipe too. I also use a quality salt and love the health benefits. To each their own!

    Thank you! Cornbread: 400° for 20 minutes Brownies: 350° for 23-30 minutes depending on pan size Cookies: 350° for 10ish minutes Muffins: start at 425° bake for 5 minutes and then without opening the oven door, drop to 375° for another 10-12 minutes. This is how I bake all my muffins.

    I got glass cannisters when we lived in Europe. Just a word of advice. Over time, the rubber gaskets harden and wear out. Unless the sizes have changed, the gaskets we can get are not the same size as the ones from Europe. You might want to see if you can find replacement gaskets in the sizes you need. Love the mixes idea. I'll definitely be making several.

    You're better off weighing your flour by grams, one cup = 144 grams. Just multiply the number of cups by 144 grams to get the total number of grams you need.

    And potato soup. And clam chowder. Also mix half and half with the potato water when making milk gravy. It saves lots of fresh milk when making bread pudding and tapioca or any other cooked pudding. Stock up when it's on sale over Thanksgiving and Christmas, or on case-lot sales.
