Speaking of shrimp tails, when I was very young, I discovered my love for fried shrimp. No one taught me how to eat it, and I just ate the whole thing tail and all. In fact the tail was my favorite, so crunchy! My older siblings were grossed out by it, and I caved under their pressure and stopped eating them. But those tails are loaded with calcium and other nutrients, so if you see someone eating them, let them be.

I can't deal with the tail. The texture just grosses me out but to each their own. We can all like what we like and peipme should just shush about it. Idk why it's so hard for people to just let people be. We dont all have to like the same things. It's what makes us all different and amazing. Can u imagine how boring this world would be if we were all the same and everyone liked the same things? Boring. Eat what u like and screw whoever has something g negative to say about it!

Oh John, my niece is gonna love you! She loves coconut shrimp (as do I). I'll make this for us next time she's home from university. Maybe served with a pineapple salsa and coleslaw or carrot salad. I think I'll give the shrimp a try in the air fryer since I try to stay away from fried foods.

Made these last night to watch part 2 of the Janet Jackson documentary! I used jumbo raw shrimp as a more special occasion dish, and made asparagus fried rice and sesame/kewpie mayo slaw as well. As a dipping sauce I used a 50/50 mixture of sweet chili sauce and Apricot preserves, it tied in with the individual peach cheesecakes I made. I did have extra shrimp that were breaded that I put into the freezer, and fried the rest up today for lunch! My partner Keith LOVES coconut shrimp and LOVES Janet, so this was a perfect meal for the night.

Those are literally the best coconut flakes I’ve ever bought. I make my husband a TOTO cake, which is a Jamaican spice cake they eat back home, and I just so happened to buy a bag of these from a store close to the house since I didn’t feel like running to Walmart. Omg, the best! I kept eating them🥰 But… I would have them just as with a yummy orange tangy sauce😋

I made this dish tonight and it was fantastic. I did, however, make a couple of slight modifications. First, I used unsweetened coconut since I had also made a slightly spicy sweet and sour plum sauce for dipping (and I thought the additional sweetness of sweetened coconut would be a bit baroque), and I added a pinch of Chinese five-spice powder to the beaten egg. Everything else was by the book and the book was a bestseller.
