Recipe
4 1/2 cups crushed blueberries
Juice of 1 large lime (can include zest as well)
1 package (1.75oz) regular powdered fruit pectin
5 cups granulated sugar
1. Prepare canner, jars and lids
2. In large deep pot, combine berries and lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to full rolling boil, stirring constantly. Boil hard, stirring constantly, for 1 minute. Remove from heat and skim off foam.
3. Ladle hot jam into hot jars, leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Screw on band until resistance is met, then increase to finger tip tight.
4. Place jars in canner, ensuring they’re completely covered with water. Bring to a boil and process for 10 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

After battling Psoriasis for years, I discovered the power of quality food and its positive impact on my skin condition. This sparked my desire to raise my own quality food. So come along with our Family as we transition from urban living to small self sustaining family farm. Learn from both our successes and failures in hopes it may inspire others to try new things. We entered into this journey with no prior experience and hope to provide many laughs and learning experiences. We learned most of how to do what were doing from watching others and hope to be able to provide a similar learning opportunity to anyone else who may benefit from this. Thank you for coming along with us on this journey and we hope it is enjoyable for you and your family.

Stan, I always appreciate your kitchen-time videos because I know I'm going to learn something new. You're the first person I've heard say to take the rings off the jars so that you know if the seal remained while the jar is on the shelf. It makes perfect sense! Also glad to hear about For Jars because, like you said, during Covid canning supplies were very limited and I have a feeling more and more people are going to start preserving so they can be more self sufficient. I was waiting to hear you say that you were also making homemade biscuits to go along with the jam but an English muffin is always good too. Hope you had a good holiday weekend, my friend. As always, stay safe.

Thanks buddy. I used to sort of make homemade biscuits using a biscuit mix from our local mill. Since they’ve closed I haven’t tried. Baking overall is something I need to learn more on. I can cook a lot of stuff but baking is definitely an area I lack in knowledge.

Strawberry jam is delicious. Nothing wrong with leaving the foam. Certainly eliminates a step. Thanks for sharing

Any idea how many cups of regular (not crushed) blueberries makes 4.5 cups of crushed? If not it’s totally okay and can figure it out…just thought it wouldn’t hurt to ask 😊 Thank you 😊

I’m sorry I think the way I typed the recipe may have confused you. The 4.5 cups is actually the whole blueberries. You then just need to crush them. I used 9 cups in this video since I doubled it and then crushed them. Hopefully that provides some clarification
