Easiest Homemade Gnocchi with Brown Butter & Sage | Frankie Celenza

Frankie Makes Little Cheesy Pillows of Heaven.
When it comes to gnocchi, you don't need a machine to make incredible pasta.
INGREDIENTS:
4 medium russet potatoes, peeled and quartered
2 eggs
¾ cup flour
2 Tbsp butter
Handful of fresh sage
Parmigiano-Reggiano, to serve
STEPS:
1.) Boil potatoes until tender. Remove from heat and rice the potatoes using a ricer.
2.) Beat 2 eggs into the riced potatoes. Add flour and combine until just incorporated.
3.) On a floured work surface, gently work the dough with your hands, adding more flour to the dough if necessary. Gently fold dough onto itself until it’s fully incorporated and soft, being careful not to overwork.
4.) Using a dough cutter, cut dough into four pieces, and roll each piece out into a ½-inch diameter log. Cut the log into equal pieces.
5.) Place gnocchi into a pot of salted boiling water until they rise to the top. Remove from water.
6.) Brown butter in a small pan, stirring frequently. Add sage to the pan and fry for a minute. Pour brown butter over cooked gnocchi.
7.) Grate Parmigiano over to serve.

    Just came back from struggle meals gnocci episode and The pillow part is the same and it is so cute He used a box grater for potatoes and even says "The rich use a fancy gadget but we can just use this"

    I love making gnocchi. Some helpful hints to help people succeed would be to use bake potatoes (too much water in the dough is the enemy of airy, light gnocchi) and to use sifted, 00 flour (cake flour). The finer milled flour means that it will incorporate more easily and helps prevent a heavy and dense gnocchi! Also, try pan frying them - the browning creates more flavor and a crispy texture on the outside.

    I'm glad that you didn't bother with all of that nonsense about rolling them on a fork or a special board to give them grooves that would hold the sauce. I've never once eaten a gnoccho and thought, "Damn... that didn't hold enough sauce." However, there was a day that I was trying to figure out what it was that all of my favorite gnocchi I'd ever eaten had in common, and I realized that it was that none of them had grooves! Rather, they were all shaped like tiny delicious pillows.

    Contrary to popular belief, you really don't need egg. I make my gnocchi without eggs (just potato and flour and some salt) and they come out just the same

    John Smalldridge if you have a pressure cooker its not as quick as the microwave but still pretty hands free and does use less overall heat than the stove method

    you did nothing right, do not do what this clown has done. his potatoes are so wet you will need to add so much flower you will end up with sinkers. yea enough is the right amount for someone who dose not have a clue in what they are doing. i am very surprised he or she did not add chocolate chip.

    "Real Italians" are just people like you and I . There is nothing mystical about them and there is no set of rules to follow in order for them to qualify as such. Gnocchi, pizza, pasta et al were all invented by curious Italian minds who happened to experiment with the ingredients that they had at hand and the cooking techniques they happened to have knowledge of. If they were "real Italians", they would not have dared such defilement of their culture, as to bend the rules. Yes, the Italians have a very interesting history and culture; yes, Italian food is very good and certainly there are right and wrong ways to do things, but I find that this whole "real Italians" concept is getting a bit long in the tooth. It amounts to nothing more than Italophilia, and is very much overly romanticised.
