Early Morning Breakfast Breakfast Quesadilla

Shabu and I were up before the rest of the family today, which means that we get to share a quick breakfast quesadilla. I don't know where my snacking and quick-meal life would be without flour tortillas and a cheese grater, but I'd certainly be thinner.
By the way, I started a Patreon account. Currently 100% of the money will go towards feeding needy families in my community, here in San Mateo. Lots of kids are out of school and parents are out of work, which means lots of families are going to be hurting. I'll be preparing and distributing free meals from my restaurant to help try and ease this burden.

    @@DamnWow I'm a big fan of Secret Aardvark habanero. It's not burn your mouth off hot but it has a nice heat and sweetness to it. If I remember correctly, Kenji used it in his grilled cheese vid

    RIP Shabu, you were the best. This is the first of Kenji's videos I watched during lockdown, and I so looked forward to them at a time when closed restaurants meant that we were only eating what we cooked. It has been 2.5 years since then, and while most of us are now "used to" Kenji putting out so many great videos, I just want to say thank you for helping so many of us get through it.

    @@yungzed I cook for a living, and that only increases the likelihood of me not usually being stocked up, since most of my diet consists of what I can eat on the go at work. With my current lack of work, I am far more stocked up than I normally would be. If my fridge normally looked like that, it would all end up in there trash. Of course Kenji has a wife and kid, and very possibly a far more active social life than I have.

    These videos kind of feel like getting a backstage pass to a chef's creative process. It's also refreshing to see him whip up delights in an average-sized kitchen. Helps to know that great meals can be made without all the fancy mixers/equipment/long-range griddles, etc.

    I love how chill you are about not making that quesadilla overly perfect. Throw the ingredients in the pan, stir, cook, put the quesadilla down, flip, scrape the egg off the pan and put into the quesadilla, fold and eat.

    ​@@jelly_is_thicc4872 Well, that was uncalled for. Mexican food is already a very broad definition. Mexico is a huge country with a wide variety of cuisines. And you can definitely find quesadillas like this in northern Mexico. :)

    -Get two tortillas -Break up a square of swiss cheese into pieces -Break up a square of cheddar cheese into pieces -Put the cheese on one tortilla, spread it out evenly -Add two packs of mild taco bell hotsauce to the same tortilla -Put the other tortilla on top of the one with cheese and hotsauce on it -Stove on Medium heat -A generous amount of olive oil in a pan -Pan on the stove -Quesadilla in the pan -Wait for the first side to turn golden-colored and crispy -Flip the Quesadilla -Add a little more olive oil -Wait for the second side to turn golden-colored and crispy -Take the Quesadilla off of the pan and put it on a cutting board -Cut the Quesadilla into eighths -Put the cut Quesadilla on a large plate with Sour Cream and, optionally, guacamole This is my depressing quesadilla recipe that I make around 3-4 times a week at 11 pm when I’m hungry If you’re very hungry with nothing else to make though, it lowkey slaps Sometimes I also add Velvedda, its optional though
