Late Night Wrong Pizza

I made a pizza. I made it with a tortilla and Oaxacan cheese and soppressata and pineapple. Don't care what you have to say, it hit the spot.
I don't think a recipe is particularly more useful than the video, but here it is if you like that kind of thing:

    This is fascinating. I’ve used a wheelchair my entire life, so it’s amazing to see a first-person view of everyday stuff: the ease of closing a drawer by bumping it with his hip, casually nudging stuff out of the way with his foot, etc.

    It probably sounds dumb but I’m nostalgic for this old kitchen. I know my way around two kitchens: mine, my parents’, and after Kenji’s early quarantine vids, I feel like I know this one too. I will continue to watch loyally as long as Kenji uploads, but weirdly enough, this is a special kitchen to me

    I already knew a bit about what some chefs prepared themselves by listening to other chefs during interviews. I remember Bourdain talking about the stuff he and his fellow chefs would make while at the restaurant or after a long shift. It was surprisingly mundane food. He said after hours of working they would make simple and filling food often times on the slightly unhealthy side and comforting. With these home videos we are seeing relatively simple and filling food. Though I wouldn’t say this stuff is unhealthy.

    @Ham Salad It was most definitely garlic. Sometimes when garlic gets old, or depending on the variety, its skin can be purple. Shallot on pizza is just weird. Not to mention he says, "eugh. That's garlic. I thought that was pineapple," after eating something off the cutting board at 7:00.

    I grew up eating Italian meals but when I tried eating pizza with Pineapple the sourness form the pineapple made me cringe and I love pineapple as fruit but I honestly hated pineapple with pizza I still do 😖

    I honestly feel so validated watching this, not only for it being a pepperoni pineapple pizza on a tortilla but making a full meal at 1 am drunk cause I had a craving (usually a variation on Dan Dan noodles using instant ramen and bacon, works quite well)

    It always feels like he is in a hurry, trying to make it in time or he is being watched and has to finish in a set amount of time. Anyways hes so efficient, well prepared and just knows what hes doing even tho hes improvising here and there. Thats the art of cooking. Much love and all the best from Germany

    I find these late-night ones some of the best cooking vids I’ve ever seen (and that includes mainstream television shows). Much more recognisable to real life too. Gotta say I’ve used a lot of them as a template for cooking at home, but with own quantities. Also being a nosey non-American, I do find myself pausing whenever Kenji opens the fridge and googling half the contents to find out what they are and if they sell it over here out of curiosity :D

    Kocak Batin i disagree, put it this way, a pineapple chutney with either a roast pork or beef tenderloin on bed of rice and spices would probably be one of the better rice bowls I can think of. The problem is the tomato sauce, I just can’t find any combination of Hawaiian pizza sauces and pineapple that mesh well to me. The flavor is just plain off.

    I know this is a late reply, but in all honesty: For the spices, they last pretty damn long for a small container, like Kenji has. Organize them and you're set. For the fridge, it's easier said than done, but -- three sections: veggies, meat, and others. Horizontal, diagonal, purple, whatever!

    I love it when their are no noises coming from the human bit sighs or grunts, makes me feel safe. Edit: what i mean is that when a person is cooking online, they usually have a bunch of talking and music, but this on episode of his has him only make food and only making small noises when he does it.

    They may not be the classiest meals, they for sure arent the healthiest meals, but these late night concoctions (esp when fueled with a bit of booze) are the most satisfying. I'm not sure that I've ever been more creative than drunk at 3 in the morning and trying to figure out how I can replicate poutine with tots or winging tomato soup when I've never even had any that didnt come from a can.

    he did it on purpose because the spark thing wasnt working on that burner, so he put the adjacent one on high. when he saw it took to long to light he went to get a paper towel to transfer the flame, but on his way back it lit itself

    I really love these easy and quick videos. It actually inspires me to cook and helps my crazy self realize that it's okay to cook with what you have. Not everything has to be a perfect recreation of a video or recipe. I would have never thought to make a homemade pizza with a tortilla, and now it's all I can think about.
