    A trick I have used for pizza in a Dutch oven is to cook in it upside down with the help of the lodge Dutch oven lid stand. Place the pizza crust on the lid and the place the oven on top. Too keep the coals on the bottom( now the top) I use a disposable pie tin.

    I have made pizzas in my 14 in. Lodge camp oven twice, and learned that is better to use more charcoal to heat up the lid, as it comes short the temperatures listed in the Lodge charts, and therefore you can burn the base of the crust before the top gets browned and the cheese is melted. The use of a pizza pan makes it easy to lift with thongs.

    A small (3 or 4 inch) strip of wax paper laid underneath the pizza beofre you begin will make an excellent handle that doesn't affect your food or the way it cooks. If you find that this is not enough support or you like a super loaded pizza use several strips laid cris cross, this might help you lift your cooked pizza out of your oven.

    Maybe some kind of grate with handles to lift out as well keeping it off the bottom... Good job 👍 thanks !

    I guess if you're gonna do this with a premade crust, you might as well bring a frozen pizza and cook it in the Dutch oven.

    I wonder if you could put a trivit (sp?) Under the crust before cooking and maybe some hooks could pull it out. Thanks for the video.

    +Pastor Peewee The care of a Dutch oven is the same as a skillet. The more you season it, the better.

  • @bigwhitefishcom

    @bigwhitefishcom

    8 жыл бұрын

    +Pastor Peewee Yes, just as R.L. Natch III said. Treat it just as you would a cast iron skillet. To season put a very light film of vegetable oil over the entire surface. Place in a hot oven (or use coals as you would to cook) for about 45 minutes to an hour. Repeat this process for a better seasoning. Everytime you use it you are adding to the seasoning.

    Use a piece of parchment paper cut 1" larger than diameter of bottom of Dutch oven. Put under pizza crust, easy removal and prevents burning.

    If you fold 2 pieces of parchment paper long ways and put them underneath the pizza in an x-shape it makes that much easier. It still takes 2 sets of hands but the pizza keeps its shape. I do it all the time with cakes and pies.

    Have you ever tried doing it with the oven upside down? Lid on a stand as if you were using it as a skillet, then use the oven upside down as a dome with coals on top. Just curious....

  • @bigwhitefishcom

    @bigwhitefishcom

    +woody 29 I have not tried that, but I would worry a bit that the coals/ash could fall on the food if you weren't careful. I'm sure it would work fine with care.

    Get a Trivet and cook the pizza on the lid upside down, then put the oven upside down on top of it with the coals. You might need a set of welding gloves. Pizza slides off no problem. Or use parchment paper.

    Nice video, one could go deeper dish type pizza, as tight a fit as the 12" oven is.... my way is easier in a way. I have a 16" Cabela CI skillet with a lid. I have thrown the frozen pizzas in it to test the results over my outdoor cooking fireplace with cooking shelves... but with the limits of charcoal and a 12"DO ... it was good to see how it came out.

    I will do something simmilar: have a Lodge 17 inch. skillet, and will use a Mexican 50 cm steel griddle whose base is just a little biger than the skillet as a lid to put embers on it, and 3 pieces of scrap square tubing as legs. Being closer to the pizza it should cook faster so I will have to keep a closer eye on it.

  • @rickthenailer

    Already did it, it was pretty much a successs. I used a 15 inch. pizza pan but the bottom is about 14 inches wide, so I used a Weber grill grate to add a little height so it would fit. First pizza burned for excess of coals beneat and too much puffing in some parts, touching the hot griddle, but once I take out a few embers and punched the pizzas with a fork before baking, all the next pizzas came out perfect. I baked 7 pizzas in almost an hour, assembling the next as the previous one was baking. Not bad at all.

    Yeah, larger diameter cast iron would be nice for the pizza. The 16" skillet with lid would be quite useful indeed.

Can you do some cooking demos showing different meals with the various uses of the CampMaid tools? This is the demo video I saw kzread.info/dash/bejne/nIOs0deMgdC3iqw.html

    You said you have not found a way to get the pizza out easily. You're in luck. Instead of cooking it that way, put the pizza on the upside down lid (which is designed to also be used as a griddle). Next put the bottom of the dutch oven over the lid as a cover (also upside down). Cook as usual. I see you have the lid holder which can be used here to elevate the lid off the coals.

    +Doc Mike Hi there, I have had that suggestion - though I have not attempted it yet. It looks like it would work well, as long as you take care to not drop the coals on your food when taking the oven off the lid. Otherwise you could have some very unhappy campers... lol
