KETO BEEF STEW
Serves: 8
3 tablespoons butter
2 lbs stew meat or beef chuck or roast, cubed
4 cups beef or chicken broth
½ (14oz) can diced tomatoes with juices
1 ½ cups green beans chopped into 1 inch pieces
6 oz portabella mushrooms, chopped
8 oz daikon radish, cubed
½ medium carrot, sliced
½ cup yellow onion, finely chopped
½ cup red wine
1 tablespoon minced garlic
1 tablespoon apple cider vinegar
2 bay leaves
1 tablespoon tomato paste
1 teaspoon dried thyme leaves
1 teaspoon onion powder
1 teaspoon black pepper
½ teaspoon salt
Add all ingredients to a slow cooker and cook on low for 5-6 hours or high for 3-4 hours.

KETO CRACK CHICKEN
Serves: 6
2 pounds boneless, skinless chicken thighs or breasts
1 packet ranch seasoning
16 oz cream cheese, cubed
10 slices bacon, cooked & chopped
1 ½ cups shredded cheddar cheese
⅓ cup sliced green onions
Add chicken to the liner of a slow cooker. Sprinkle ranch seasoning over chicken. Top with cubed cream cheese. Cover and let cook on low for 5-6 hours or high for 3-4 hours. Turn heat to warm. Shred chicken. Stir in bacon. Top with shredded cheddar cheese. Cover and let sit for 5-10 minutes or until cheese has melted. Top with green onions.

    Jerusalem Artichokes also make a good substitute for potatoes in soups and stews and stir-frys. They aren't artichokes and aren't from Jerusalem but they have inulin, and are low glycemic. Not sure if they could be purchased in stores but I've raised them for years and they really are super easy, grow with little care and are delicious on a veggie try with a dip.

    Yum! I use the typical little red radishes for potato substitutions. A lot of people don't like them but if you cook them until they are soft and lose color they taste just like potatoes. I haven't tried the daikon radish yet. Thanks for the recipes!

    I use home made beef bone broth - amazing nutrition and flavour. You will never go back to store bought broth cartons again. I buy bones from organic meat store and freeze liquid into portions. Worth the effort. Instant Pot has replaced my slow cooker.

    I usually do this too but haven’t gotten around to making a batch. I have the bones in my freezer - just need to make it. I use a slow cooker and let it cook for 2-3 days to get the most nutrition as possible.

    Thanks for these! Two of my favorites and I love how simple they are! It’s been awhile since I’ve made the Crack Chicken. It’s so good I sort of overdid it and ate it too often so I finally got tired of it. Took awhile, though! 😂 Anyway, I’m pulling some chicken out of the freezer now!     Having surgery in early January! Won't be able to do anything for 6 weeks - no lifting, etc. My husband, well, he's not someone who cooks.     Tasty recipes, have to agree that daikon radish is a great sub for potatoes as are turnips and Swede……..     Looking forward to making the beef stew. Have you ever tried using turnips or rutabagas instead of daikon? I've roasted rutabagas in place of potatoes and they always turn out as a great substitute for me!

    Let me see if I've got this straight. Your preparing a very tasty meal that will require very little effort after the beginning. You get too the home stretch and prepare to add a little liqued gold to the mix, then enjoy a bit of it as you relax and watch a little tv.     These look great and I'm definitely going to try them. Beware that substituting parsnips for the radish might not be wise as parsnips are pretty high carb. A better substitution would be turnips. 🙃

    looks good. If you can't find daikon, try using Korean white radish. Its delicious raw, pickled, and cooked in soups. I use it sometimes when making some of my favorite Korean soups, but haven't in a while. I think the net carbs or Korean radish is also smaller than daikon. You can also substitute with a turnip if you can't find the other ingredients. Turnips though...I like to mash like mashed potatoes, but if I'm going to add to a stew or soup I want to cook it first by browning it a bit in some kind of cooking fat (today I did with the lamb fat from the broth I made last night), and sea salt. If you've never had turnip, it tastes...different. Not bad, but if you're not used to it, then it could seem like that. But its a good alternative. Otherwise, I'd boil it a bit first separately in water to try to get rid of the additional taste BEFORE adding it to the stew. Then you can also taste it and see how you want to season it. I'd use the Korean radish, personally, but that's because I like it. I also like to cut it and pour some tajin on it to snack on. The Korean radish has a taste that reminds me of jicama. Also, TONS of nutrients and actually is a good source of Vitamin C, just in case SHTF and you need to grow something for Vitamin C, fyi.

    Thanks for the beef stew recipe. I miss that a lot. Will Xanthan powder work as well? Will I have to make it into a "slurry" prior to adding it to the rest of the recipe?

    You can use it (about 1-2 teaspoon) but anymore might make your soup slimy. You don’t need to make a slurry but can.

    @@Lucinda_Jackson I should also say, I've used arrowroot powder back in the high school days, as my Mother kept it stocked. She only used it selectively, but then other thickeners moved to the forefront. Lots of home cooks used arrowroot and tapioca back then. I guess it grew out of fashion until KETO became a big thing. I don't know if they used it in Atkins as well, but I do know some Atkins folks liked the results of psyllium husk.

    @@frances4309 That’s interesting! My mother used flour for gravies, roux and white sauce, etc and sometimes corn starch. I don’t even remember her having anything else! So, it was new to me. I started with xanthan gum then moved on quickly! I do think one little bag of xanthan lasts a lifetime! Even using it in baked goods, it looks brand new!

    @@KetoFocus Sounds good. For dinner, I believe I'll be preparing some chicken Tetrazni, a bit of a Carnivore cheat, but still pretty darned good. It's a pasta bake casserole made with diced up chicken or turkey (or even seafood), mushrooms, and a buttery, cream based sauce. It's a popular American dish created by chef Ernest Arbogast in honor of the Italian opera star Luisa Tetrazzini, who debuted at his San Francisco hotel in the 1900's. That being said, have a wonderful Tuesday full of family, fun and food. 😊😊

    I just have a hamburger patties pork chops every don't want to talk about That o yeah a good old steak 😋 and a Salad no dressing and cook the meat on a grill you can keep it simple that you chicken and put in the pot season put it on low and go to sleep or work that takes less than 5 minutes

    I usually get a Spanish wine called Campo Viejo Temperanillo. It’s 1.4 g carbs per glass. European wines are generally lower in sugar compared to American wines. I get this one because I can find it at most grocery stores. But, Secco Wine Club is an online wine club for low carb wines. They have one called Palo61 that is 0.7 g carbs per glass and it tastes good!

    I put all the ingredients to a slow cooker, then cooked on high for 4 hours as recommended. Upon return home, came to uncooked stew… Disappointing. What did I do wrong?

    12 carbs for 1 large turnip I put 1 turnip in mine and thats spread out to 4 people and multiple days so I may get 1 carb out of 1 serving

    carrot only has 6 carbs in it lol but the radish u threw in has 14 carbs lol that aint no keto friendly stew, plus the onion is prolly another 14 hell those ingredients u threw in with the green beans prolly makes this whole stew like 50 + carbs u threw in

    Good recipes but NO ONE should buy the electrolyte packet unless you want to just spend and waste money. You can salt anything, take a magnesium pill and the potassium is so low it does not make a difference. Just eat foods high in potassium.
