Slowly Cool your bread, the more steam that escapes the less moisture your bread will be retaining.
If your using a Pullman loaf pan like this one slide the lid off halfway for about 10 minutes. Then roll the bread loaf into a towel and transfer to a wire cooling rack for around 5 minutes. Leave your bread rest on the cooling rack for 1 to 2 hours or until completely cooled.
