    Respect to these two guys cooking the food. The dishes look delicious with a hint of Hennesy, interesting concept. I love to taste the hor fun noodles with silky egg sauce, mm must be yummo 🥰

    3:50 That's an interesting technique. I rarely see sauce being put on noodles before going into a wok. And the owner/chef's wok skills are obviously well-honed too.

    Depends on the chef. Normally u dont as u can see on 4'15" the KT got stuck - thats where the caramel from the sauce stuck unto.

    I think this is so-called "Cantonese Style" fried noodle, Wat Dan Ho (direct translate as Smoothy Egg Kuey Teow). Same to "Yeng Yong", Kuey Teow + Rice Noodle. Or, Rice Noodle only which sometime I call "Nong Dai Mi" (Burn-end Rice Noodle). These are my favorite fried noodles.

    If the soup requires milk or carnation to whiten, they're not using enough good ingredient to make the broth in the 1st place.

    Evaporated milk always makes fish/seafood noodles taste better regardless of how premium the broth is to begin with. You could use abalones, the best fish and tiger prawns etc, but a dash of carnation will still elevate the taste.

    It is obvious in the video that the chef has already fried the tomatoes, and the sweet and sour taste of the tomatoes were brought out Food preference is very personal Adding milk help enhance thickness and flavour, doesn't mean that the ingredients used are insufficient Seems like you do not know about cooking ? In Malaysia market, it's very common to add milk in fish head soup

    @@HackenYeng I don't cook. But I'm those whom Chefs are cooking for. You know? Tasters? People from whom Chefs get their paycheck from? So I'm just guessing I know a thing or two about cooking. Fishhead soup is traditionally 'White' in color because cooks back in the days uses lots of fish bones to make their soup base. With that, the soup base is always white in color. Nowadays, cooks cut corners and cost and their soup can never be white (Not using enough ingredient). Tomatoes, at any amount, fried of not, will not get you the white color. So to make things look a little authentic, fishhead noodles hawkers these days dump a load of those awful tea creamers in there to make their soup white. In the same time there are some dummies out there who likes to protect these hawker's attitude. While the whole world is moving ahead with better things. Some still like to protect those who cut corners and shortchanging the public. There you go. Just a few drops from a person you find "do not know about cooking". And please don't kill yourself over the shame you put yourself up to.

Speaking of the general public like they are dummies- I'm sure they know evaporated milk is added to the soup, and if they tell the chef not to, I'm sure it is an option and the chef will gladly oblige. Not everyone can afford to have chefs cooking for them, who are "tasters"? ,and whom chefs get their paychecks from. Some people are in an economic situation where hawker food is what they can afford, and it is so revolting that in your "supposed" position and status in life, you have no empathy for it whatsoever. Also, what is it about hawkers shortchanging the public ? I can't tell if you are a troll, but they are out here busting their butts off, and if you call using premium ingredients like Hennessy XO (might not be premium enough for you as an ingredient) insufficient, and still think that is shortchanging the public for what they are charging, then I guess you think you are the only one ENTITLED enough to make profitable returns. Lastly, no matter how much you know about cooking, please adopt a good attitude. You may have 100 brilliant chefs working for you, but without a good attitude, you could eat/taste/devour/savour countless DELICIOUS meals, but the byproduct is undoubtedly NAUSEATING !
