Well today was the day I finally tried your bacon cooking strategy. I have a big Christmas brunch for my family every year and cooking up pounds of bacon on Christmas morning is such a tedious messy job. I cooked several pounds of bacon using your method and it worked great! Thanks so much!

If you leave the salt in, the grease will eventually get moldy. It is easy to wash and get pure white lard to use in places you do not want bacon flavor(baked goods, pie crust, ect.). Use a wide mouth straight sided glass jar. Add 1/3 liquid grease, 1/3 hot water to the jar and stir well, then refrigerate till the grease is solid. Drain the water, remove the lard, scrape any grayish or other surface contamination off of the solid lard. Replace lard in the jar and melt to liquid by placing in a shallow pan of hot water. Repeat the above process as many times as needed until the lard no longer tastes salty(3 times is usually enough). You now have pure lard. You can use the same procedure to purify beef tallow for soap making. Mom knew all sorts of depression era household tricks of using everything and waste nothing.

As a kid, in the late '50s and '60s, mom _always_ had a container of bacon grease in the refrigerator. Our container was smaller than the one you show, but it did have a strainer on the top, too. that is because the bacon is steam cooked from it's own moisture (from within the meat), as well is being finished off with the frying. The liquid at the beginning of cooking contains a lot of water... which eventually evaporates as the lid is lifted several times... the remaining bacon grease fries it. So as the bacon is generally cooked already from the moisture content, the frying time is a lot less, and a lot less mess in the pot.

I start mine out with melting a pound of bacon grease from the previous batch in the pot. Use medium heat until the water cooks off then low heat until the bacon is at the “swinging” stage. Don’t filter the grease. Just put it melted into a container and refrigerate it till solid then remove it from the container, flip it over and scrape all the brown crumbles from the bottom and save it to flavor other dishes.

I also use bacon fat to sauté my herbs and veggies! It’s endless! That's a cool way of cooking Bakon. I have been cooking Bakon in a black iron Dutch oven for years. I open the package and dump it in the Dutch oven on low heat. come back a while later the grease is coming out of the Bakon. I then give it a stir to separate the pieces turn the heat up a bit, and come back when well browned. Also, the oven does well. Just put bacon into a small baking pan laid out in single layers. Place in a cold oven and set the oven to 350. In my oven, the Bacon is well browned by the time the oven reaches 350. if not, it won't be much longer. I enjoyed your method. I just don't have all that much money to spend. Saving that bacon grease is a lot cheaper too.

I'm sure some have said this previously, but when cooking bacon this way over a gas stove, remember that the "moisture" on the inside of the lid when you take it off to stir it is bacon grease. When that comes into contact with the open flame of the burner (not recommended), amazing and ugly things can happen. Be very careful. That being said, I cook mine just like they showed here and it works perfectly.

Been using the micro wave for the last 60 years.. in a glass casserole pot with lid and when feeding 8 people.. best way to do or stove top...used a 5lb box of slices.. in last few years have taken 10 lbs of pork loin back and done in oven on aluminum sheets and takes only a few minutes per pan to par cook...cool down drain and bag in snack bags and freeze ... have them ready to microwave and make sandwiches or for other uses... NO mess cooking and shortens time of things like bacon ..sautéed onions done in Dutch oven... 4bags of onions gives 36 snack bags .. less spoilage waste...

I cook my husband's bacon in an electfic kettle. I usually cook 3 lbs at a time. Cooked bacon goes into a snap bowl with 😮 towel, one on bottom and one on top. I cook just short of crisp. I cook his breakfast: egg on fry pan, buttered toast and bacon on baking pan in oven on about 300-400 until bacon chrisp and toast light brown. I cook soul food style, and we love using bacon grease in place of oil or any other seasoning. Bacon grease makes great milk gravy.

This is a good way to cook bacon I have started cooking mine in my oven on cookie sheets. I bake on 425 for approx 20-25 min, I don't even turn it any more, realized I didn't need to. A tip for people is we cook a whole pkg like 2 lbs at a time and store whatever we don't eat in the freezer that way all we have to do is pull it out and heat for another meal. Bacon freezes beautifully. If I have a recipe that calls for bacon I don't have to cook some , it's always on hand. I keep telling myself I'm going to cook up about 5 lbs one day and freeze because we go thru it so fast.

It takes about 15 minutes to get the bacon absolutely perfect and the grease falls below so all you have to do is pull the bacon out with some tongs and it is done. No mess and absolutely no dishes. I only clean out the pot and the grease about once a month max. Easiest and cleanest method I have ever used.

Oh, cooking bacon in a pot - that sounds intriguing! Dr. Ken Berry's method must bring out a unique texture and flavor to the bacon. It's always exciting to see different cooking techniques, especially for something as universally loved as bacon. The carnivore and animal-based tags suggest a focus on meat-centric diets, which have been gaining popularity for their health benefits and simplicity. It's great to see people experimenting and finding new ways to enjoy their favorite foods! 🥓🍳✨

I absolutely recommend getting a set of Silicone Spatulas also to add to the others. Perfect as you'll be able to get everything bacon liquid and bits as it bends and forms to the side out of that pot whereas the wooden or nylon spatulas/spoons will struggle when pouring out into the container. This will likely be my new method going forward for crispy bacon as obviously splashing can be an issue, my only worry later was the water but it everything looks good and evaporates later anyways.

Only bacon grease. I would keep them separate. We get beef tallow from our local bbq place. It’s filtered and white as snow. Jared and kept in the pantry. We keep the bacon grease out on the counter at room temp too. It just needs to be air tight and make sure you strain the bacon bits out with the strainer, those go bad. Keep those in the fridge and add to eggs ect.

I have been using the cookie trays in the oven with parchment paper under the bacon and it works well but leaves a lot of mess to clean after. I am going for your method in future, although the air-fryer also works with minimum clean up. I have done bacon in a cast iron pot similar to how you did this, but I ground up the bacon myself first and the result is crispy bacon-bits when it is done.

I tried last night after your other video and it was a failure as most of the bacon was burnt and had to be thrown away. I realize now the problem was wrong pot ( a stainless steel one) and too high of a temperature. Going to try again because my old method of baking the bacon is a lot of work

  • @AnimalBasedInYourFace

    @AnimalBasedInYourFace

Yes every pot is different and you have to turn the bacon every 3 minutes or so. Stainless is very bad to stick and burn. We did it in a SS pot and an instant pot which is SS. Both burned on bottom and had to clean that mess up, which we have videos of both on our channel. The bacon didn’t burn but had to be cooked on a lower heat and turned about every 3 minutes. Also if you have leftover saved bacon grease you can add it to the SS pot and heat before you add your bacon and this helps.

This is how I’ve always cooked my bacon. It’s a lot less aggravating this way and I can cook large packs all at once. I get a good bit of bacon grease, as well. I use a mesh coffee strainer to strain the grease. Love me some bacon!

Really enjoyed your video. I already knew the method from the OG (KB). I’m from New England where the home of Yankee Candle is located. They have or had a candle scent called……Mmmmm Bacon! Love it. Thanks for your efforts. Regina from the coast of Massachusetts

Using silicone tipped tongs also works great to rotate the cooking bacon. I have also found that putting a couple of table spoons of lard in the pot to get hot before putting the bacon in helps to get the cooking started sooner and the results have been great....crispy bacon that isn't burned. Carni-life rules!

The addition to the bacon of grease makes sense! You are not waiting for the initial rendering! All good tips! I love my spurtles! Gave my kids n grands some! My Granny was a wise woman! We save all our meat scraps as well n pressure cook a gal or so of them n make our broth! If you want to freeze in qt bags lay flat on sheet pan n then store!

Since I end up cutting most of my already-fried bacon anyway, I started cutting it into bacon-bit size and then fry it in a pot. Way less involved than en masse on the griddle like I did for decades.

I just found your channel today (11-02-2023) and I am now a subscriber 😊 I am very curious about the paper towel under the pot though… I have a induction stove as well.

Thank you for subscribing! Yes you can use a paper towel if you have an induction stovetop. Check out a video I made about it here kzread.info/dash/bejne/oqKFsKSvoLWcYs4.htmlsi=hokEfLPrVtBI0Gd2

I don't eat much bacon but this looks like a great way to do it and yay bacon grease for my eggs. I think if I had a paper towel under the pan it would ignite on my glass top. ty

Most definitely if your cooktop is electric! Ours is an induction cooktop. I explain why I use a paper towel halfway thru this other video kzread.info/dash/bejne/p4hmsLuGn5bepag.htmlsi=jZs3WEKXd8oP3RVQ

I bake my bacon in the oven on a flat cookie sheet with parchment paper at 350% for about 15-20 minutes depending on thickness of the bacon and I turn it over 3/4 of the way through and it’s perfect and the cleanup is a brease

I bake mine, now, too. I was so glad to learn this as I hated frying bacon and getting burned by the popping grease. I don’t flip my slices, and it’s still perfect. I start it in a cold oven. I probably won’t try this method unless I needed to do the whole large package. I like nice straight, whole strips.
