Can you use increasing height clips to increase the pitch?

No sir. I just stumbled onto this video, but worked at MBCI for 6 years in project service dept. I am 3rd generation sheeter and metal building man with 35 years of personal experience installing every profile of metal / composite roofing and siding panel in the world, all over the world, and my father and myself of course have known closely just about everyone who is anyone on the business side and the field side of this work. You have a low system (3/8") and a high system (!-1/8) which is typically determined by the R value requirement (Insulation thickness) of the roof. Also, if doing a retrofit system like this, a high system is used. Even though the R panel (Now almost all is "PBR" which just means it has a "Purlin Bearing" leg, AKA "X leg" on the under lapping side, an actual plain old "R panel" is like above, the same on both sides) is actually 1-1/4" high, and the high system of the Trapezoidal standing seam roof system (For MBCI this is Double Lok if you feel like seaming it and have high winds to deal with, and Ultra Dek if you don't and you don't, virtually all mainstream manufacturers have these panels with a different name, a lot of PEMB manufacturers sell them under a different name but buy them from MBCI) is only 1-1/8", it still works great to retrofit like this. I have sold and / or installed literally many acres of it. It's good out of the box thinking on your part though in regards to new product development! And if anyone could do it, MBCI would be the ones. They are the company "The pros" use. For many reasons I won't go into here. The reason that adjustable clips have not been made to increase roof slope, is that firstly it would create a nightmare for the engineers because every slight difference in clip height would require design adjustments. Also, even to increase slope by only one unit of rise per 12 units of run, which is a pretty slight alteration, the clip would have to be over a foot high even at 12 feet! If you are wanting to change a pitch on a roof, check out the "Nu Roof" system by MBCI! Now I have been using this system a couple of decades before it ever had a name, LOL,, but it is a great system designed to do just what you mentioned! Just keep in mind that PEMB (Pre engineered metal building) are designed to "Barely" stand up, and not to take the kind of load imposed by Nu Roof. It works great on like flexcore / form a dek panels (lightweight 2000 psi concrete) etc. I just noticed who that is installing the panels on this video. He is a great man named Kenny Buchinger, and IF there IS anyone on God's earth that has more metal building knowledge than myself I am not ashamed to say it would be Kenny.
