because it's expensive to process, there's less demand for it compared to coconut oil, storing and moving it is tricky, they don't have good ways to use leftovers, or they just want to focus on making money efficiently.

I love this food. In Singapore, Malaysia and Indonesia we call this lemang. It is glutinous rice mix with coconut milk and a pinch of salt to be cooked inside the bamboo with a special leaves in it. When the lemang is cooked, we usually eat with rendang - a spicy beef gravy. Usually we eat this during our festive season like Eid Mubarak. But now lemang can be eaten anytime
