    I just purchased mine last week. I have the wood option but I have a small gas burner that i placed in the middle of the oven I did 200, 250, 300, 350 and 400 (Celsius) each day for just over an hour. I didn't see any moisture or sweating from the oven at all. Calgary is a very dry city so not much humidity in the air. When should I place wood flat on the floor and make a fire? Also what is the highest temp the oven can get to?

    Good questions all. Let me break them down and I apologize for the delay in answering as it sounds like you were waiting to cook! Your curing process sounds solid. My curing fires lasted about 4 hours but, it requires a little more effort when doing it with wood. If you got it up to 400C and you didn't see any moisture dripping out I would imagine you are good to go. As far as when to place the wood flat on the floor, you should be OK to do that after you're done with the 3rd or 4th curing fire. Did you measure the temperature of the floor? You want to make sure it got up to temperature as well. I would imagine the gas burner did a better job of heating the dome. To be honest, I don't know how high the temperature of the oven can get because my thermometer stops around 550 C. I get a little scared when I see the thermometer display "high" on it. I shoot for 450 C dome temp to cook.

    Hi Paul, I am back once again with yet more questions! When taking the temperature of your oven, what sort of temp are you looking for in the base of the oven and the dome? I was cooking at approx 400c on the base, but I am thinking perhaps 30-40c hotter would give be better results? Thanks again for taking the time to answer my questions.

    Good question. I strive for 450c, about 850f. Just as important, though, is how well saturated the floor is, which is why I heat the oven up slowly.

    ​ @Bitonto Pizza Greetings once again, I have been experimenting with the placing of my fire in my Zio Ciro. I wanted to place the fire at the back so it would be easier to cook and turn two pizzas at once. However, when doing this I found that the oven didn't heat up as evenly as when I placed the fire at the side. I just wondered if you had experimented with the position of your fire?

    Great question, Kieran. What you have discovered is a property of dome ovens in general. The reason for this is somewhat simple. When the fire is placed in the back, you get a direct draft through the bottom of the opening. Because the chimney is placed in the front, you get a convection current that stays in a relatively narrow band. When you place the fire on the side, you get more circulation around the oven, almost in a spiral shape, which keeps the dome warmer. My recommendation is to place the fire towards the back in either the 10 or 2 position. This works extremely well. Also, when heating the oven I place the fire in the dead center but make sure it is spread out to heat the floor and sides well. Then, when I'm ready to cook I move the fire to the side.

    Hi, you mentioned that you have cracks in your oven already. Can you please explain more about that is this normal? Does it damage the oven in any way? What should you do about it? I ask because I'm about to buy it oven I'm considering this one I need to know if this is an issue?

    Hi Paul. With the gas option, do you think it would be ok to recure with the flame at the minimum ?

    Good question. I don't have the gas so I haven't tried it. Methane burns at about 1900C while wood burns at about 600C. The way they install that flame it wraps right up against the dome. So, with what little knowledge I have about it, I wouldn't try it in my oven. I would cure with slow-burning wood fires.

    I remember asking the distributor (Manuel) if it was ok to use the gas burner for a mini-cure, and he advised against it. Even on low, it will get the oven to 900F, and that is what you're trying to avoid. He also told me to NEVER set the burner knob to any setting other than pilot, low, high. Doing an "in between" setting will combust the gas inside the piping.

    I'm still thinking of the position, Jean. Since it is right up next to the dome, it is going to heat the cement too much, IMHO. You want your curing fire in the middle of the oven, out of contact with the dome.
