Yeah you're spot on. There's a million cooking channels where the sponsored host is using 30 dollar steaks and artisan bread from the local fresh market and it's just so out of touch with what I and everyone I've ever met in my miserable life have to make due with. Then when there there is a budget cooking thing, it's some flyover farm mom making a month's worth of macaroni and cheese for her family of seven, or it's recorded poorly on a phone in a dirty kitchen with poor instructions. A clean, well produced stand and stir like this that looks good but uses the peasant's groceries to mealcraft would be the spot.

As someone who works in the cheese industry, I can tell you the reason the parm is brown. Cheap parm producers heat the hell out of the curds to expel more moisture and make a hard cheese quicker. They also probably age it at a higher temperature.

I think the rind thing is also what they do like Josh said, usually cheaper products use a lot of the by products (like the strange but still crab meat that is just like the parts from the connectors of the crabs that they sell in cans, it's like water fibers of meat). I've never heard of anyone making cheap parm ONLY for the grated cheese so even so it's likely the rinds and leftover bits, and alot of the other grated cheeses also include cellulose which makes it a bit lighter.

Dollar General has an interesting business strategy. They’re trying to be the old-timey “General Store” for small towns, bringing a decent variety of products but remaining small and easily accessible to the smaller towns with no huge corporate stores like Walmart or even Albertsons/Safeway. So, you’re more likely to find them around LA rather than in LA.

@@christianhansen3292 That usually happens with these small town stores even if they have a big corporation backing them up. Just a step above a fancy convenience store, they can charge more because they don’t have the big city competition. Still, their prices are better than most. Safeway keeps having mergers with European grocery store chains and their stuff and gets fancier and prices go up.

Seriously that south carolina team was ridiculous. They had so much depth, chemistry, and talent that they could've sent two separate teams to the tournament with that roster. No one could figure out how to defend them with all their subbing and every lineup played well together. So good.

I always say I am excited to get old because I already love soft foods like casseroles. lol. Josh, you may be interested in my husband's family's Great Depression dish, which is similar to tuna noodle casserole, but without the noodles (though you can serve it on/with noodles or rice if you wish): You heat tuna in a frying pan, add mushroom soup, canned peas, and crushed potato chips. It is cheap, it is amazing, and we cook it almost once a week, it is a family staple.
