Today we continue the journey into the Rum Barrel with Trader Vic's Rum Keg. Because of technical difficulties I couldn't share too much of the tasting notes between myself and Kevin Crossman but we really didn't have a lot to say. Neither one of us loved the drink and I doubt I'd ever make it again.

    Even though I wont be making this - I still love the content! Had my first Smugglers Cove rum barrel the other week and it surpassed the hype. But I also love all things allspice so it hit the spot for me. Excited for this series!

    I would cut the lemon juice down to 2 oz and increase the pineapple up to 6 oz to strike a good balance

    Seems tart! Have you thought about making the Demarara Dry Float (SC?) I had this drink at Paradise Lost and it was the most memorable for me.

    "It's lacking what you want a Rum Barrel to be." Which for me is...rum. Seems like there wasn't enough rum to balance out all the other liquid, espcially all that lemon juice!

    Any ideas as to why Trader Vic's drinks tend to be so acidic? Was it his palette, or is something lost in translation?

    Wouldn’t using a passionfruit syrup in addition to the rock candy address some of the tartness issues?

    It might, but the cut down version I made you'd only be reducing the passion fruit by 1/4 oz if you halved it and then increasing sugar by 1/4 oz. It was plenty sweet with the syrup, pineapple, and apricot. It needed more rum and less lemon since it's 1 oz of lemon for each 1 1/2 oz of rum.
