    Excellent Video. which reminds me of an important bean storage tip, I've recently discovered once a bag of beans is opened, that by keeping all the beans tightly sealed in the refrigerator (+3C) and only pulling out enough for the shot (usually 10g or occasionally 17g), that i never have to adjust my grind setting, ever.. every shot is fantastic . i've also since realized, this method might explain the popularity of single shot grinders like the Fellow Opus, etc... Previously, i stored coffee at Room temperature, in a sealed can/bag, & eventually moved from an initial 8 to a 3 grind setting on my Breville Express, over the course of a few weeks/months using a new 1kg bag, with taste become progressively worse once i've had to tighten the grind setting to 3, or lower 😩. But no longer ... im enjoying rich beautiful tasty shots right to the last bean now... ☕😘

    Very informative! Now for the obvious questions: What is the impact to coffee quality if the roasted coffee was vacuum packed? Frozen?

    Our bags are not vacuum packed but they are air tight, so air cannot enter once they are packaged. And we package our coffee right after roasting. I don't think Vacuum packing or a nitrogen flush would have had a significant impact, especially with the coffees that were 6 months or more after roasting. With regards to freezing. I have a few customers who do like to freeze coffee and they say it preserves freshness but this is for a shorter period, maybe 1 to 2 months. I will have to throw a bag in the freezer for a year and see.

    I find freezing does assist in retaining freshness. I also notice it helps with grind distribution and reduces static retention.

    That 15:05 😂 Nice job. So in the end, as the coffee is getting old, we should rise temperature in order to reach a better extraction? (Of course keeping the right proportions between aging / temp)

    Yes, to get a little bit more flavour out of a coffee that is older I find that raising brewing temperature helps.

    Nice coordinated experiment, but the 1 year shot was your fault it tasted bad and bitter. As you raise the temperature, the coffee only becomes more bitter and disgusting, I would suggest to lower the temperature and then grind finer and extract more from the coffee, this way it will taste more full and sweeter

    What a great video! Thank you so much for doing this. I would like to ask you a question though. When I receive my coffee from the roaster, it is around five days off roast. If the bag is left sealed from the roaster, not having been opened at all, how long will the coffee be good for? I’ve been ordering one bag(12oz) at a time, but if I am entertaining, it doesn’t last me as long. I was just wondering if it would be okay for me to order two bags at a time. Thank you so much. I wish you were here in the United States. I would love to visit your store.

    Hi, assuming you consume about one 12oz bag per week I think you can safely order 2 or even 3 bags of coffee. You will be at around 3 weeks after roast when you open the third bag and that coffee will still be great.

    I haven't tried this yet but I will but the theory does make sense because I have had experiences where I ground a coffee for my espresso and then got busy and came back to it after a period of time (longer than 1 minute) and the shot was not optimal. Once you grind that bean the coffee begins oxidizing much faster.

    I do have a question about large Italian Roasters and their 1 kilo bags of coffee. Without naming any names, I am looking at a 1 kilo bag with "date of production 29 Set 2022 with a recommendation to "best before use by "29 Set 2024", a two year spread from roast to a recommended discard date. Based on your roastery tasting findings, what do you recommend to us regarding the usage of these Italian large scale Industrial Roastery products. Do your aging findings apply to these "Italian Beans", or should we, as consumers, considered them well beyond optimal taste based on the long term storage of these bags before they find their way to us, the consumers. Would I be right in believing that you would recommend that we use beans roasted by local small roasteries to optimize flavor in our espresso cups. So what are your thoughts and recommendations about large industrial scale Italian coffee bean bags ?

    Hi, that's a good question and one I have been asked a few times before. My personal belief is that it is not possible to get an optimal experience from beans that are imported because the supply chains are simply too long. These beans are imported by sea and by the time they arrive they are already several months after roasting and the best flavour is already long gone. I always recommend dealing with local roasters for coffee (and also local breweries for beer) to get the best results.

    How much, if any, would an air tight storage container change the results? Do you ever have tastings like this video in store for the public?

    The bags are air tight and they were not opened until that day. We would have to collect a year worth of coffee again to do a public tasting but it is a good idea, it would be fun.
