Does Knife Sharpness Matter? || Knife Sharpening Or Knife Skills, Whats More Important?
Does knife sharpness matter? Well of course it does...but how much? We went around to a bunch of knife and industry professionals to see if they could cut a simple strip of paper 3 times with a razor sharp knife. It turned out to be a lot harder than you might have thought. There were a lot of different techniques and a couple mental breakdowns. Check out the video and let us know how you think you would do!

as a professional paper cutter, allow me to share some insights into the paper test. first, technique is the most important thing, but a super sharp knife is helpful but not very important. having a clean edge, no burrs or knicks, is the key. also understanding the grain for the paper, all paper has grain, and if you understand the grain you, can cut paper easily with a 30 degree (60 degree cumulative) if you can go in the right direction. I use the paper test specifically for checking burr and not really for sharpness. this video is great because it shows a difference between a sharp knife and a perception of sharpness. great video keep up the great work
That was a lot of for the viewers. The Big Brown Bear had the thousand yard stare and it looked the the 15V mirror polished piece. Gangster slow roll up on it. I was hoping Lynn Thompson would make another appearance.

Having declared my dissatisfaction with this sharpener last night kzread.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ I thought about the problem some more. It occurred to me that I might be undoing each attempt at achieving a sharp edge by the repeated attempts. So, I tried to clean up the unsatisfactory result by honing with only positions 3 and 4.Miracle!! A really nicely sharpened chef's knife, more than enough to handle my needs. Admittedly, it did not reach professionally sharpened razor-fineness, but it is now significantly sharper than it was. A bout of breaking down carrots convinced me. So, major apologies to the manufacturer, Amazon, and all happy and potential owners! Follow the directions: don't buy it if you have ceramic blades; and don't overwork your knife blade.

Great challenge Zac. Seeing this, made me want to do it at home and it's not easy, even though we (as knife-guys) have extra sharp knives, it's the flexing of the paper that makes it fail sometimes. So it does have a lot to do with the technique. Thanks for a great and entertaining video.

Great video, nice to see everyone trying the challenge, I just tried it with my Böker and managed three cuts ok. As you say it's more down to technique, though the hollow grind helps somewhat I think.

most people don’t even know that paper has a grain to it and is always much easier to cut lengthwise than it is to cut sideways. in this competition i would try to cut diagonally
Bought a second 1505, so that when the mod video comes out I have a clean one to work on! Also got some ritdye more, and I'm going to do some tests on the scales of the first one while I wait! It's still holding up great at work, perfect work knife

Joe Flowers brings everytime a smile on my face because he is such a nice guy. Allways great conversations and knife knowledge. The only sad thing imo is the Condor knifes quality in the end control. They need a better quality control at the factory. The bevel (2mm difference) on the cutting edge of my Condor SBK is very uneven on both sides.

Zac, important question and I will probably base my purchase based off of your recommendation: Benchmade Mediator or the new Benchmade CLA with MagnaCut? Thanks, love your videos.
It's both. What a lot of folks don't get is that a lot of the technique is in how you hold the paper, but the knife MUST be at least a certain degree of sharp, so it's not 100% technique, but without technique you will always loose this test.
You gotta give it up for the slow technique!

I just did this test at home with my edura in k390 easily I wish I would of been there
I would use my Frontier Bowie, go slow. No one took out a long fixie and just carved slowly.

Lol its absolutely 1000% technique!!! Lol tho that being said..... the sharper the knife versus a duller one they make completely different sounds actually cutting and going through the paper!!!! Lol fun challenge tho... lol thinner more larger knives seem to be the ticket with slicing paper!!!!.. but it's def technique...... there has to be enough edge to consistently be able to get through the cut!!!
