do I miss eggs?
Most vegans usually say they miss cheese the most after turning vegan. I personally don’t miss cheese at all. What I did miss were eggs. It’s such an easy-to-prepare protein source, so versatile, and tastes great! Of course, being against the practices involving egg production, I am always on a quest to find easy vegan swaps for egg-based recipes. This Vegan tofu bhurji is one of those.
It gives me the same satisfaction as the spicy egg scramble that I used to have growing up!

As an Indian vegetarian (that doesnt eat egg) my dad loves Paneer Bhurji and he is usually the one to make it in our household. Honestly I love Paneer so anything with paneer tastes good for me.

I noticed that my vegetarian Indian friends consider eating eggs as non-vegetarian. But being vegetarian means not eating meat while being vegan means not eating any animal products including eggs. Could you please explain this discrepancy?

See, a lot of people think eggs are not meat but some people do including my family. Vegans don’t eat ANY dairy products or meat such as milk, cheese, eggs, and etc. Vegetarians eat dairy products but don’t eat meat. Here is why my parents think eggs are considered meat: The egg yolk supposedly turns into a baby chick after a while and people are just eating the baby chick in the form of egg yolk. Unfertilized eggs are basically a waste product since they will never develop a chick, so by your reasoning you should be able to eat unfertilized eggs!

@@jeannaakanova5303 yes people are aware of that, but the answer isn't a simple black or white one. The classification of eggs as 'non-vegetarian' is due to a number cultural reasons (and only applicable to particular cultures/regions of India btw; there are many, many more), and it might be hard to grasp for you if you're not aware of the history behind it all. So yes, the reasoning might be a little hard to understand, but it IS a different culture altogether. [For comparison, the 'gluten-free' and 'vegan' lifestyles of the west are similarly somewhat perplexing for some Indians, (the new generation is more aware of course)] In India we often have 3 classifications - 'vegetarian', 'eggetarian (veg+eggs)', 'non-vegetarian' [and many more; if you're interested, look into 'Jain' food, another major food-classification group; again with a lot of cultural reasons behind it]. And most vegetarians in India are 'lacto-vegetarians' (veg+dairy products). A lot of it comes down to cultural differences.

@@jeannaakanova5303 actually we Hindus believe in minimalizing the harmful effect on nature to live sustainably since the last 5000years. So, we mostly lived on Vegetarian food and the typical vegetarian Indian food won't have eggs because it's an animal product ultimately. Some Hindu groups are even stricter by having only one meal a day, leaving on fruits, fasting, not eating plant tubers etc, to cause less "suffering" to plants. We did have non-vegetarians ,but majority were vegetarians and still are. Vegetarian Hindus eat dairy and plant-based products, Vegan Hindus don't touch dairy products too. That reflects in the culture of India, of course, Muslims and Christians here eat meat of all animals, but they use significantly less meat as compared to rest of the world, due to the Hindu influence.
As someone with an egg allergy, going to Indian was incredible, UK vegan cakes are just too pricey for me to bother buying so i never have them or dessert anywhere, but in India, I could walk into any cake shop or restaurant and they were all egg free!!!

Not all indian bakeries are eggfree. You need to explicitly ask for Eggless cakes and confectionery.

@@anons090 nah most bakeries are veg and you can check the symbol as well. Most famous ones like monginis are totally vegetarian
As an Indian my mother makes it everytime our fresh milk gets spoiled and not drinkable The paneer obtained from it is the softest and creamiest 💜 Edit: thenxxx for the information in the reply section guys🤧

For people who are looking for an alternative to Cilantro because you have that gene. Do not use flat parsley. Try fresh basil. Thai basil for Asian dishes, euro basil for Spanish dishes. It's apparently similar enough in profile and fits those dishes well. Flat parsley has no flavor where coriander/cilantro does have a flavor beyond spicy soap.

Well freshly picked flat parsley has indeed a lot of flavour and the profile is way closer to coriander than basil is. Thai basil is ok but European basil has a totally different taste. As well as a different reaction to being soaked in water and cooked.
It's genetically predetermined whether cilantro tastes like soap to some people. So they unfortunately can't help it, it's in their genes. Sucks for them. 😋

Yeah thank youu for explaining the difference between the vegetarianism around the world vs vegetarianism in India. Yes as an Indian vegetarian, we don't eat eggs or meat but consume dairy products like milk, cheese, butter etc. Tho I didn't knew that those vegetarians who eat eggs are called eggitarians here-

Most Indian vegetarians outside of india eat eggs as it's harder to find vegetarian options in the west. But some will still avoid eggs. And in India itself most vegetarians don't eat eggs. As for the reason, eggs are considered meat as they can develop into an animal. Biologically speaking it's quite different from milk or honey, as those foods are made by animals but do not contain cells. Milk cannot be alive, but eggs can be. But some modern vegetarians will still eat eggs. If they're not fertilized then they will never become a chicken anyways.

You should try Panasakaya (jackfruit) biryani. A very popular Andhra dish served in weddings. It tastes soo good and a great alternative in vegan cooking

I would recommend trying Mary’s test kitchen’s pumpkin seed tofu for this! It’s higher in fat than normal tofu so should work perfect for this

@@sanjanaakotyada4753 well families are different likewise are the tastes. But I mentioned southern India cause we don't have any traditional panneer recipes of our own nor do we break/curdle milk to make it so both tofu and panneer are distant proteins for us.

@samayalupta Paneer was not always unknown in southern part of India. I've seen both sweet and savoury paneer recipies in medieval Kannada cookbooks. It probably fell out of favour in recent history.

Although I'm an Indian Vegetarian, I eat eggs as when my father was little he had to eat them because he was ill despite my grandmother not wanting him to and therefore he also got me into eating eggs.
Eggitarian is a lovely word for that, I'm gonna use it more often, wherever I can.
As a Pakistani meat eater whose tried to be vegetarian several times, I respect any type of vegetarians/vegans

Lacto-vegetarians would consume dairy. Ovo-vegetarians (sometimes called ovotarians) consume eggs.

Based on my reply, I think I read it as "do" instead of "don't", or missed the word entirely. I thought you had stated that lacto-vegetarians are egg eaters. Hence my correction that lacto-vegetarians are dairy eaters and egg eaters are ovo-vegetarians. Mea culpa. I could argue some finer points surrounding ambiguity in your phrasing in a couple of places... but I'm not really here to get too pedantic. Basically, we're in agreeance and have the same understanding. That aside, I have no idea why you brought vegans up out of nowhere. Neither of us mentioned vegans. So there's some confusion there. I became vegetarian 4 years back, have never felt the need to find alternative of non-veg. I left non-veg while practicing Yoga & within my mind I was fully content on leaving it may be that's why.
I am also using tomato purée now a days , tomatoes are being very very costly in Sweden Nice toast
I wish for a day when the world understands that egg is not vegetarian. Oh how many awkward interactions can be avoided.

Paneer alone is not high fat. You get low fat paneer options. If you want to make low fat paneer at home you simply use low fat / skimmed milk. I hate how you categorise vegan items and non vegan items. You’re not making a better choice by not choosing paneer or choosing tofu. It’s about preference. Also tofu does not taste like paneer anyway. It can get really chewy if not cooked properly. Paneer bhurji would give you a different taste. So as much as you can replace it, it won’t be the same.

Exactly. Don't diss paneer unnecessarily. Tofu gives me digestive issues and bloating, everytime I eat it. So I stick to paneer. It depends entirely on each person's body and their personal preference.

Pure Bliss, indeed! honestly tofu scramble w onions and peppers (tumeric for yellow) is such a perfect alternative for eggs imo
First of all the definotion of vegetarian is someone who eat plant based food but also animal by-products like milk and egg and the ones who avoid even the animal by-products and only eat pure plant based is vegan so most people in india are vegan and not vegetarian and those who do eat egg are vegetarian and not eggitarian lol

I agree nothing can replace eggs, but the reason people stop eating eggs isn't because they don't like the taste, it's because the egg industry is very cruel to the hens there.

That explains SO MUCH! Thank you ❤! I had an Indian friend who wasn't an eggetarian and since he also wasn't vegan I was so confused. I also never forget though, once I made a cake and he got to it first (this was in the dorms and we had a communal kitchen where I left the cake baking) because he said he could smell it. He was actually eating it by the time I came back 🤣! I didn't have the heart to tell him that the cake was made with eggs...I guess if they're cooked, non-eggetarians can't tell? 😮
