To make the the drink in the video you will need:

3/4oz frozen concentrated pineapple-grapefruit juice
1/2oz fresh lemon juice
1/4oz rock candy syrup
2oz gold Puerto Rican rum
1 scoop shaved ice

Blend in electric drink mixer and serve in voodoo tumbler glass with cracked ice. Decorate with fresh mint and a fruit stick.

    I make my own pineapple juice with a blender and a strainer. If I want a thicker consistency, I add some of the pulp to it. Also using a reamer with a pulp catcher for the grapefruit will give you a thicker sort of juice. That's just me. Great cocktail im going to have to try it out.

    I Love Lucy wasn't considered wholesome in its day. It was shown in a late time slot, after younger children's bedtime, so that kids wouldn't see it.

    Great video as always. Picked up a Voo Doo glass on eBay some months back. You’re correct, not cheap. I’ll have to try making this drink. Keep up the great content.

    The flavor of the juice is at least doubled in the concentrate, and the concentrate would have been sweetened, so my first guess at recreating this cocktail would be to double both the juice and the sweetener. So I'd do 3/4 oz. of each juice, and 1/2 oz. of the rock candy syrup. That'd at least keep the drink from being so rum-forward. Doubling the sweetener and tripling the fresh juice would be my next try. Hmmm, I gotta get cocktailin'!

    So we tried it with the 3/4 oz. of grapefruit and 3/4 oz. pineapple juice, 1/2 oz. lemon juice, and since we didn't have rock candy syrup, 1 oz. of regular simple syrup, along with the 2 oz. of Bacardi 8. It was pretty good, not rum forward, but fairly undistinguished. 1/4 oz. of falernum or cinnamon syrup would probably kick it up a notch, but at what point is it no longer a Babalu? 🙂 Anyway, always love seeing you spin-up new tiki cocktails!     I have one of those shavers! I discovered you can use a pint deli container as the perfect ice mold for making round blocks for the shaver.

    Subbing some ingredients might work sometimes, depending on what it is, but something like a grapefruit/pineapple concentrate is not going to be anything like the juices of those two fruits so there's no way that drink would taste as intended. Maybe you could make your own concentrate by dehydrating some fruit and then re-hydrating it. I'm sure its not as simple as that but no doubt you could do some research and find out exactly how to do it. A grapefruit and a pineapple bitters might even get you closer to how it would taste with the concentrates.

    Incidentally, Trader Vic's has a modern recipe for this cocktail posted which uses 1 oz. each Pineapple and Grapefruit juices in lieu of the concentrate. It still specifies just a dash (1/4 oz.) of the Rock Candy Syrup. The Rum and Lemon are the same as the original. Cheers!

    I’m not quite sure if you made this one right. When it was calling for concentrate, I would’ve used frozen juice concentrate thawed Well you won’t find a blend. You could buy a can of both frozen grapefruit juice concentrate and grapefruit juice concentrate thaw and mix 50-50.

    100% agree with this. You would get much more acidity, and sugar from using the concentrate rather than juice itself.

    Hi Spike Your ice shaver…. The cup that you shave your ice into is actually a cup that you make An ice block that fits in the shaver so it shaves efficiently.

    You could have made a syrup with equal parts pineapple and white grapefruit juices simmered down to a consistency resembling a frozen concentrate

    Cooking would have carmelized the pineapple and brought out the bitter in the grapefruit . Better to freeze out the water from the juice . The issue is more manufacturers blend of juices and the suger they add.

    there is ccccccconcentrated grapefruit juice and con. pineapple juice. just not together .

    There was a proto-tiki bar in L.A. (315 W. 6th St.) in the late 1940’s-early 1950’s, called “Club Babalu”. It had an outrageous matchbook and a cool neon sign.
