Doubt on pyramids isn't about making structure but about the material they used. If pyramids were built using these muds no one will doubt because other Egyptian monuments are just amazing. But for pyramids and other structures in different part of the world they used super hard material that even laser can't cut with that precision with our current technology. Also how do you move and lift these.

The only issue I can see, is that there doesn't seem to be any way for the water to get OUT, other than carrying it back out by hand. Which I believe means the water will grow stagnant.

Right? That was my first thought. And HOW do you solve the problem of standing water? No drain to flush it out = stillwater & mosquitoes. This is all fun for 1-2 days but after that reality sets in.
