Desi Lunch - Pyaz Besan wali Roti and Adh-rirka (khatti lassi)
Ingredients:
Wheat Flour 500gms
Water as required
Salt 1tsp
Besan/Gram Flour 400gms
Green Chilies 8
Onion 2medium
Coriander Leaves
Mint Leaves
Salt 1.5tsp
Red Chili Flakes 1tsp
Coriander Seeds 2tbs
Kasuri Methi 2tbs
Cumin 1tsp
Carom Seeds 1/2tsp
Water 1/2cup
Yogurt 2cups
Water 2ltrs
Salt 1tbs
A few years back this was a staple dinner on weekends in desi homes in various regions of Punjab. This roti made of gram flour and wheat flour is very delicious and its pairing with butter milk is great.

It was so lovely to see you prepare this!. When I was very young we lived above a restaurant near Pakistan Chowk. My dadi would make the dough, add the besan and then send me down to the tandoor to have them cook it. It was always served with a very diluted lassi and desi ghee. I had a smile on my face the whole time I was watching this.
میری امی میں بھی اس طرح تنور پر روٹی بنایا کرتی تھی مجھے بچپن کی یاد آگئی ہے اور ساتھ میں ہم لسی پیتے تھے یہ روٹی بہت ہی مزے دار اس کو مصری روٹی کہا جاتا ہے اللہ تعالی میری ماں باپ کو جنت الفردوس میں اعلی سے اعلی مقام عطا فرمائے آمین 😭

Bro. In Original “Missi” roti recipe, ingredients are mixed while kneading The Atta dough. No need of “basin” or chickpeas flour. And it tastes EXCELLENT. Knead the Atta dough with ingredients, make “pera” round balls & ask Tandoor wala to bake it & apply butter or desi ghee. Wonderful flavour bro.
