Ingredients (1 Serving)
**Simmered Fried Tofu Pouch
Large, unseasoned, rectangular fried tofu pouch, 200ml water, 1 tablespoon soy sauce, 1 tablespoon mirin, 1 tablespoon sugar
-Use a paper towel to remove excess oil from the fried tofu pouch.
-Put water, soy sauce, mirin, and sugar in a pot and bring to a boil. Once it starts boiling, reduce to low heat and add the fried tofu pouch. Simmer for 3 minutes.
**Dashi (Broth)
600ml water, 1 piece of dried kelp (5cm x 5cm), A handful of bonito flakes
-Put water and dried kelp in a pot and bring to a boil. When it starts boiling, remove the kelp and turn off the heat. Add the bonito flakes.
-Let it sit for 20 minutes, then strain out the bonito flakes.
**Udon Broth
400ml dashi (broth), 2 tablespoons tsuyu, 2 tablespoons mirin
-Add tsuyu and mirin to the dashi (broth) and bring to a boil. Once it comes to a boil, turn off the heat.
**Kitsune Udon
-Cook the udon noodles and rinse them 3-4 times in cold water.
-Dip the cooked udon noodles in hot udon broth 3-4 times, then place them in a bowl.
-Pour hot udon broth over the noodles and top with simmered fried tofu pouch and chopped green onions.
