Here it is in all its luscious glory, a fully Plant-Based Classic New York Cheesecake! The crust is slightly crumbly and sweet, similar to a classic graham cracker crust but a little chewier. YUM. The filling is dense, rich, and creamy with just a hint of sweetness. I didn’t want to make the filling too sweet because the sweetness can come from the oozy fruit topping. It is fabulous, but you can totally enjoy this with no fruit topping as well! A super delicious and healthy cheesecake treat.

Looks great, Jill! Suggest you add the word "cooked" before chickpeas. Trust me on this. Some folks will think you mean dried raw chickpeas!

My comment was in response to the "trust me you won't taste it" in the video. I just wish people would stop saying it, it's not true. And, as I state I'm not the only one who can taste it. Interesting and inspiring. I know I won't ever be able to cook like this but I need some new ideas. It's great to see what's possible on a plant-based diet. I feel like it's a necessity to be able to cook your own food if you're plant-based. I'll be sure to check your other videos.

How do you measure solid bulky ingredients like dates?

I just pack them into the measuring cup for a rough measurement.

This looks amazing! I am curious though .. what does the nutritional yeast add to it?
I think this recipe is missing one thing: lactic acid. I know you are whole food but lactic acid comes from fermented beets and has changed all my faux dairy recipes. It adds a tang you can't get from vinegar although you can use both. It really takes it to a whole new level!

Now that's a guilt free cheesecake. Full of beans and tofu wow!

You can easily split the dates by hand to remove the pits. Be careful not to grind any of the pits or you could destroy your machine! 😊

Try white beans that are very well cooked (preferably soaked overnight first). I would also replace chickpeas with them because, in my experience, they have a much more neutral taste. You can also make many things with them that replace dairy and even mayo.
What can you use to replace the tofu? We have some in our family with a soy allergy.

Yes, it helps to slice and put parchment paper between slices before freezing.

I don’t really have a replacement suggestion for the cashews. They are what gives the cake richness and body.

I would recommend using very well cooked white beans. Soak them overnight, then cook until completely tender.
