In Indonesia, Murtabak is one of the most popular street snacks and is known as "martabak". There are two versions of martabak in Indonesia: the sweet one, and the savory one with eggs and meat.
The common ingredients for Indonesian egg martabak, apart from the dough, are seasoned ground meat (beef, chicken or goat), sliced ​​green onions, some spices (optional), beaten eggs, salt and potatoes. Some street vendors mix ground beef with curry spices. In Indonesia, the spices commonly used to make seasoned ground beef are shallots, garlic, ginger, cumin, coriander, turmeric, a little salt and sometimes a little monosodium glutamate. All spices are ground or chopped and then fried completely. Some martabak makers add additional ingredients and other variations to make their martabak unique, but they all use the same main dough. To stir-fry martabak, the chef uses a very large flat skillet or iron skillet. Usually they use vegetable oil for stir-frying, but it is not uncommon to use ghee or butter.
Before serving, martabak is usually cut into pieces. The savory version of martabak in Indonesia, Malaysia and Singapore is usually served with pickled spices consisting of diced cucumber, sliced ​​carrots, shallots and sliced ​​chilies in sweet vinegar. In Malaysia, Singapore and some areas in Sumatra, martabak is served with curry sauce (curry). In Palembang, another variation of serving martabak is with curry (usually diced potatoes in beef curry) and topped with chili and sweet and sour soy sauce.
