Here's my favorite ultimate recipe of crumbly and juicy Carrot Cake!
What you need:
For the cake:
carrot 200 g
eggs 2
sugar 200 g
vegetable oil 200 g
flour 200 g
baking powder 1 tsp
cinnamon 1 tsp
pinch of salt
walnut 50 g
Bake at 140° C for about 1 hour
For the cream:
mascarpone 250 g
heavy cream 100 g
powdered sugar 50-100 g
Some things:
- if you don´t have juicy carrots, you can soak the cake in milk;
- you can add any nuts and experiment with spices;
- I used olive oil;
- I cut the cake right away, but I did it for the video =) it´s better to give it time to soak a little.
This is a really cool recipe. I´m a big fan of carrot cake and have tried so many recipes. This one is simple, gives the right texture and flavor.
