A scoop of veggie mix added to when cooking your rice (with extra water/broth) makes an awesome veggie-rice side dish.

I love this idea! I live in a split-level home which has a small kitchen. I've had to move all of my canned and dehydrated goods down 2 flights of stairs into the basement. I think I can find room for 1 jar in the kitchen! This makes so much sense, and you've certainly saved me a whole lot of trips up and down the stairs. Thanks, Bev! I'm doing this later today!

@@future.homesteader I completely agree. I did have the jars in my kitchen, initially, but there isn't much room for storage, and I don't have a pantry. So, my canning and dehydrating ended up in the basement where I can keep it dark, and most of the purchased food landed in the garage. While it is a little spread out, I'm up and down the stairs many times a day, anyway, so I just plan for what I need and make those trips count. Also, I do have a large basket that I carry down the to basement with me. It really helps. I also use it to carry my jars downstairs after I've done my canning. Thanks for your comments!

THIS! I never did this until this year. What a time saver. And a money saver. When I have those last two stalks of wilted celery or a couple of carrots or an onion.....I blanche it all up and throw it on the dehydrator. When its done I add it to the jar. So easy. I also just put dehydrated a couple big bags of frozen hash browns....no more icy potatoes and it takes up so little room. That's her....Bev Crocker.

I am dehydrating madly, thanks to your encouragement, as things come into season here in Australia, or I find them cheap. I was gifted 8 green capsicums (sweet peppers to you) this week, that are now in the dehydrator. I am on the look out for cheap carrots, we can get "jucing carrots" in a 25kg bag for about $8, so this looks like the go for me next week. I have 2 x 2lt jars of cellery, 1lt jar onions, 1/2lt capsicums, and 1/2lt of root veges (turnip, sweed, purple & orange carrots, sweet potato. I am yet to do corn as I havent found them cheap enough as yet. We are in the middle of spring here so I am looking forward to summer, tomatoes etc

That beautiful jar makes my mouth water! It is becoming wet and cool here in North Carolina and my taste is for a big pot of soup! You have given me a boost to try dehydrating. There is just me and the 5 dogs but after a Sunday dinner with a roast or some chicken there would be a pot of soup in our week along with some corn bread or yeast rolls.Yes I have bought 25 lbs of flour from Costco.I made biscuits yesterday and a pound cake this week. Before I know it my flour has gotten low.Guess my grocery list will grow a little bit more. When one depends on rides to the store or let’s one go for me I buy in bulk just so I have what I need.People say oh you can’t buy everything to last a month but you can if you think about it well enough.Have a wonderful day on the homestead and may you always be blessed.

Soup is my most favorite food especially sinigang - Filipino sour soup. My preferred souring agent for it is tamarind. I tend to add broccoli, spinach, chard, okra, eggplant, turnips, radishes, Daikon radish, etc to mine. Basically anything that will add flavor and absorb the souring agent tastes good it it. Vegetables don't last long in my house since they are my favorite and what I get the most energy from. We don't have very many though since I'm the only one of the three of us that likes a variety of them. Daniel will only eat the green vegetables if I sour them with tamarind. He doesn't care for the turnips and radishes. I also tend to add tomatoes.

Good Morning!! This is something I've been wanting to do for years. Especially when I was in the Army. I thought how nice it would be to have homemade soup mixes to take with me during field exercises or while at the gun range. A nice and great alternative to eating M.R.E. Especially during the winter when we had heaters. Just cook on top of a heater. Or when camping/hiking. Or for the kids now that they're grown and moved on to college, their own place or military. Good food. Grown and prepared with love. You are doing a great thing by sharing this knowledge and showing how easy and not so hard to do. Thank you.

Earlier somebody asked about homemade dog food and this book actually has recipes for that plus tons more. I'm not sure how to send you a picture of the cover sorry not tech savvy enough. The title is "Homemade-702 Ways To Save Money And The Earth" by Readers Digest. It's a soft cover book. Light green and white with pictures on the cover depicting the different subject areas that are covered. Pretty sure I picked this up at Sam's club but can't say for sure because I've had it for awhile now. Copyright 2007. If and when you have time or interested I hope you'll look it up and hopefully you'll like it enough and include it into your personal library. Thank you.

I also do a mix like this, mix it in a big bowl first, but I also make a Vegeta type ground up mix as flavour enhancer to other foods like pasta dishes, cooked meats, etc. I grate onions, carrots, celery, garlic, sweet peppers, and parsley, then cook the works together for 20 minutes, squeeze out the juice (that I usually can in half pint jars), dehydrate the rest, then grind it up. No salt. It gives a huge hit of healthy flavour to other, rather bland food. I make enough batches to fill a 2 litre jar for winter while fall prices are cheap on all the veg or I have them in the garden.

I love green peppers as long as their raw. I do not like cooking with them cuz I don't want to bite into one. So, I dehydrate them then grind them into a powder. When I put the powder in my chili, I get the flavor of the green pepper and not the texture. It's one way to add healthy veggies to your diet that you don't like. Great for getting veggies into children too!
