maybe take a look at some other products labels and how the allowed leeway in the grams of things can lead to calories not adding up especially in per serving size if the serving is just few grams (the calories themselves have a bunch of leeway too). like how you can use sugar as a packing agent for a sweetener and be '0' carbs.

Well, she didn't actually "Replicate" the flavor as we don't know what "Spices" were used and she doesn't have the actual sauce to compare it to, but she debunked the claims against the ingredient list since dragon fruit tourns out to be an emulsifier. Great Job Ann!!! ;)

I get your point, but what she did is not proof of being a food scientist. I'm not a food scientist and even I know how to make an emulsion. I think the question shouldn't be "is she a chef?" but "does she have a food handlers card?" "is she abiding by cottage food laws?" "is she abiding by commercial food manufacturing laws?" "has she consulted any qualified nutritionists in the creation of her label?" "has a third party verified her ingredients list?" bc if all it takes to be a chef is having a friend who wants you to cook for them, "chef" is not the qualifier we should be using to see if someone's mysterious homemade sauce of unknown origin can be mailed over days in the summer heat.

Sauces like this DO NOT fall under cottage food license protection. She most likely didn't have one, as you have to pay to apply, you need to provide official documentation about your kitchen, the foods you'll be making, and they have to send an inspector out before approval. Only (and I quote) "baked goods, candies, jams, jellies, preserves, fruit butters, dry spice blends, or dry tea blends" fall under a food cottage permit. I’m a food safety inspector with a county health department here. Our food safety program permits food service, processing, and storage facilities and follow requirements that are state-wide and are consistent with the 2023 FDA Model Food Code. Private chefs do not require permitting where I am. They are using the kitchen, and sometimes food, provided by the client. They aren’t operating in the scale of a caterer and do not have do any preparation at a separate location. Everything is prepared on-site in a home for a client and sometimes their guests. It’s very small scale. This sort of thing doesn’t require a permit or any sort of certification (again, where I am located) but the client could certainly ask that they have some sort of food safety training certification. She mentions that she is RAMP certified but didn’t mention any food safety certification, so I would assume she doesn’t have one. The production and bottling of the pink sauce would require some sort of permit, probably from the state out local health department. But honestly this sort of operation has very little risk of food borne illness, as the final product will be acidified to the point of being shelf stable. Speaking for my department, we would require that the bottles either say they require refrigeration or that she submit the product for testing at a lab to verify the acidity.

The talkshow then later was totally set up to make Chef Pee look like a victim of internet trolls and haters, who didn't want a single, black mother to succeed with her business. That clip that Ann showed wasn't even the worst part of the talkshow, the host totally going at Alley was something else. Said host later deleted the show from his channel, but there are enough clips around. It was also quite clear that Chef Pee simply couldn't handle the business part, hadn't really looked into food safety standards and seemingly considered her first group of paying customers her test subjects. Since then she partnered with a condiment distribution company that now produces and ships her sauce (which probably is a good thing).

The information that dragonfruit acts as a stable emulsifier along with the information that its colour fades in a few days really does seem to fit well with the ingredients list - assuming Chef Pii provided an accurate ingredients list, it sounds like these findings are consistent with that, and if that were all there were to it, I think it would mostly end there. HOWEVER.... We do know the label has some accuracy problems with the number of servings vs. the serving size, the nutritional information, spelling, and so on - Chef Pii (or someone in her employ) seems to have been LARPing as a nutritionist, and if these results are anything to go on, one can be forgiven for looking at the ingredients list with suspicion! And, given everything else we know about the Pink Sauce fiasco - the initial packaging/shipping disaster and professional concerns, for examples - I think we have a pretty good idea of why Chef Pii never seemed to take the time to explain that the colour shift was normal for dragonfruit: I'm going to assume that the product research and development, testing, QA, etc. was probably going to be as shoddy as the labeling, packaging, shipping, and so on, and Chef Pii was probably as surprised as anyone when the sauce didn't maintain its natural colouring. Handwaving that sort of thing as an "I'm not perfect" learning curve seems to be part of her SOP, and there seem to have bigger fish to fry in doing damage control and so on, so I could easily imagine that figuring out why the colour was inconsistent and explaining to her customers that it's normal was probably not high on her list of priorities. Those criticisms aside, along with the fact that there's no way I'm going to trust my life to a queasy pink mail-ordered food from a TikTokker, I am impressed that Chef Pii did at least seem to be responsive to complaints about the leaky and damaged packaging, seemed to deliver every order as faithfully as she could under the circumstances of her limited experience and expertise in this sort of thing, and provided refunds or replacements to customers when prompted - that's not the worst customer service I've ever heard of, and would probably put her ahead of the curve for Kickstarter reward fulfillment (for example, where Kickstarter reward fulfillment is notoriously spotty, especially toward the seedier side of the amateur contingent of that platform....)

From what I remember the reason people were concerned about The Pink Sauce ( I Saw Swell Entertainment's video on it) was how the Pink Sauce was being shipped. It was not refrigerated and was being shipped out in a heat wave and looked as if it was being stored in a garage. Many of the early bottles that people got were gassy which was a sign that a possible bacterial reaction . A few had exploded and were clearly rotten. That seemed to be the main reason people were urged not to buy it or eat it that I heard. I also found it alarming that someone was selling a food product and didn't understand that by selling food they might have to answer to the FDA ( FOOD and Drug administration).

Here's the thing, with Game Theories, nobody can really 'fact check' you because they're gut feelings but when it comes to 'Historical theories' he can actively get checked because there is a wealth of knowledge out there and there ARE people who make a particular era of history their specialty. Exactly, This is just my thoughts but, all Ann did was show that you can make a sauce with the ingredients on the bottle. She never tasted the og pink sauce like a lot of ppl. Now all Ann has to do is taste the og sauce and compare it to hers. If it tastes similar then we'll know for sure that the pink sauce is used only with the ingredients on the bottle. Or if someone else would like to make Ann version and compare to teh og sauce then that will be perfect. So basically Ann could have created a whole new recipe and Pii can easily take it and pretend she was making that all b4 since Ann's vid I'd out. So until someone makes a taste comparison with Ann's sauce and the og pink sauce, I'm still gonna think that something is still wrong with teh sauce. And considering Pii didn't know what FDA was, would she really know that dragon fruit Could be and emulsifier?

As to the pink sauce lady, She doesn’t know basic food safety or what the FDA is, I’m not granting her the title of chef imo. She handle everything abysmally and I think that is what made this whole situation so much worse for her. She ruined her image by responding to the valid claims in a rude condescending manner. But that doesn’t mean she deserves all the hate and death threats, so while I don’t like her or support her brand based on her poor skills and bad attitude I appreciate Anne setting the record straight in a professional and fair manner. For instance, i saw her label that was wrong, heard that she'd both said the color hadn't changed and that she'd changed the color, heard her say "what do you mean fda approved, it's not a medical product", and some other iffy things on her part. And because i'd seen multiple lies or negligence on her part, it was easy to think that she had done other lies or negligence. I still don't trust her, even more so following the video she filmed of herself having a supposed fda officer show up at her home (which sounds unlike anything i know the fda to do), and the questions felt off and she was allowed to film it (i don't know the privacy laws of her state and whether you need 2 party consent or just 1), and she even had a sparkle filter on her (tbf, i don't know if it was a video she'd already started and was interrupted by the doorbell). BUT! Having someone like ann who has more knowledge on the food portion of the topic and level headedness actually go through explaining her thought process on the statements going around is a much better starting point.

That's incredibly boring and not share-worthy. On the other hand people who jump to conclusions get more clickable videos out quicker and those get transmitted further out until noone knows what the source is but the information has been repeated so many times you have to just assume it's true because why would people be faking their death over it if they stand to gain nothing from it?

I think her biggest mistake was rushing it. I think more people wanted to buy it than she anticipated and she didn't take her time with labels or recipe. I totally get why she rushed, loads of people want their things *now* and would've likely lost interest if they had to wait like 6 months for her to get it all sorted. It could've gone better with time. I hope she's successful honestly 💛

Her biggest mistake was not creating and developing a branding and business plan before putting out a product. Anything can be rushed if you have a solid plan but it is apparent she didn’t have that. You would think the first thing thoroughly detailed would be the nutrition label after creating a product. That alone wasn’t an issue with rushing but rather organization and documentation.

I actually see this all the time, but not in foodーit's extremely prevalent in the art & writing communities, especially webcomics I find. I've even done it. People make something, mention it once kind of offhand, & then get overwhelmed by the feeling of "MUST POST! NEED VALIDATION!" when someone shows interest & end up crashing & burning when they dive in head first. I've seen it so many times, I actually have a script as to how to apologize for doing this as someone with ADHD xD that was Chef Pi's mistake. She just kept doubling down instead of taking a step back, looking at the situation, & saying "sorry guys, this is going on hiatus until I have things sorted! everyone who's order was messed up, email me & you'll get a refund" before settling down to make an actual plan like a mature adult. Her Pink Sauce would've actually gone places if she hadn't've been such a huge bitch to her customers. She didn't dig her own grave by label fuck upsーthat was done when she doubled down on her dishonesty & started attacking people for reasonable concerns.

(On my phone, it looks like it's a slightly pinker version of thousand island dressing, so close to an apricot color.) Maybe that's the issue? It seems to me if you want the hot pink ranch you'd be better off just using Ann's recipe and making it fresh in small batches to use up before the color starts to fade, rather than purchasing the already-faded store version that defeats the purpose.
