Awww....thank you so much for that wonderful comment. Just make sure that you are properly identifying your daylily. When we decide to dig up our daylilies to keep them under control (they spread) we always enjoy cooking up the tubers also. We had always eaten the flower pods by sautéing them in the past....but this pickle recipe is just lots of fun. And it always amazes guests in your home to serve a jar of them at a meal....

WELL, I can now put that on the foraging list!!!! I have loads in the yard that were on the property when we arrived, and have been selling the fans as I'm able online and at the flea market. Thank you!!!

That is really cool! I am not a pickle or vinegar fan. I see daylilies growing all around in our area. Next year I'll harvest some tubers. I have peonies that have spread in my feont bed but I really love orange daylilies. Amber does have so much wealth of information & recipes, she's amazing! I don't have as mich time as I'd like to browse and write recipes that i want to keep for future canning. SNUG is the best group and really takes the pressure off from the "canning police". I just heard a well known YT canner the other day warn about rogue canning "and for the love of Pete don't open kettle can". As well as not being able to water bath anything that's not high acid or sugar. I have seen more people dry packing potatoes & such in videos lately so there are some changes happening. If we lived in other countries, I wonder if we'd be laughing at ourselves here in the states? Love you Lorrie! Many Blessings from Deborah in West Virginia! 🧡

You always bring joy to my heart Deborah!! I'm so blessed to call you "friend"!! I'm sure we WOULD be laughing at ourselves.....the powers that be here on canning standards are kind of ridiculous. And those that insist to follow every thing to the "book" are really insistent about pushing their opinions. I'm more of a mind....just try it this way (it was good enough for grandma and grandpa)....and see for yourself. Whats the old saying....You can catch more flies with honey than you can with vinegar? Big hugs my dear!!

I think that is a great place to start! And go easy at first to make sure that you dont have an allergic reaction. This is the policy of any wild foraged food of course. And proper identification is super important also. The tubers are edible also and can be boiled up like a potato. Hope you enjoy them!!
