In this video, I'll show you how to cut up a whole chicken into pieces, so that you can use it for chicken curry or chicken biriyani. Most Halal butchers do cut up chicken into pieces for you, but they tend to cut the bones in half. This leads to small shards of bone in the chicken and is very unpleasant when eating your curry. So let me show you how easy it is to do it yourself! You'll learn how to cut a whole chicken Indian style!

@@MilhaanHome I froze the bones left and some meat for a stock, I got intimidated. I did make the most flavourful butter chicken and separated the drumstick/thigh, and baked in the oven marinated, and the other pieces in the sauce, it was so enjoyable. Thank you,

I’m here because my local butcher seems to think it’s not his job to cut a full chicken for me into curry size pieces. Which I thought was quite rude!

As a newly training butcher, it is rude - however, many are dealing with plenty, especially with the pandemic and plenty of times that I've been asked has been in moment of extreme busyness, and many times we are rushed - making the chicken low quality. I am watching this video so I may do a better job for my customers. So thank you.

genie.The reason being is he would make more out of selling his chicken pieces. If he did cut your full chicken he would be loosing profit.

Nah, it's just a pain in the ass, we didn't grow up with it, we aren't trained for it, and most of us who work in grocery stores especially are only set up to deal with beef and pork so for sanitary reasons, you'll find we go with pre-packed chicken. Please listen to this lady though, and learn from it, bc if NOTHING else, if you do ever ask for it and a butcher says yes, you can know how to explain to someone what you actually want instead of just asking for "cut it into tiny pieces with the skin off" and complaining to a guy with 400 other things going on when they don't do it the way you wanted.

overall the right cuts but inefficent process. old school taj chefs don't do this. also breast should not be used in currries. grind for kebab or something else.

Thank you! This is how my father taught me to cut chicken for curry. As for using breast meat for kebab, that would make very dry kebabs. My son likes boneless pieces in curry so I add them to the curry. It’s personal preference😊

@@vasantimaster2712 respectfully, chicken breast is traditionally used for kebabs but grated onion, egg and bread crumb are used to provide moisture. A trick of the trade of the great chefs. I recommend getting old cookbooks pre-1850 to see how things were done before fashion and globalism started adulterating desi cuisine and wisdom. Thx and happy cooking

@Lyle DeColyse Interesting! I didn’t know that chicken breast was traditionally used for kebabs. Now that you mention how to moisten it, my mum uses all those ingredients in her kebabs and cutlets😀 Thank you for sharing your wisdom and knowledge and keeping traditions going! 😊🙏🏽
It is very interesting that Indian recipes never call for chicken skin. It is always removed. There must be some wisdom to it probably tied to the impurities or scum that arises when you use the skin.

These days we don't add the skin for health reasons, as it's quite fattening. But I remember as a child, going with my parents and getting freshly caught chicken. My mother would leave the skin on the chicken and add it to he curry! Honestly, it tasted delicious and we all used to fight over it! But I don't think I could do it any more! If you wanted to try it with the skin on, you definitely could!

Fat is needed for health of course but only in the correct quantities. That said, the origin of skin removal comes from the Mughlai soldiers who would marinate whole chickens and skewer them with their swords over open fire. If you kept the skin on it would burn and the inside wouldn’t cook resulting in bad tasting and potentially dangerous food. Skin was always removed for good reason and you can see this if you read old cookbooks from before the industrial revolution. As meat eating became more prevalent in the vegetarian nation of India, chickens were incorporated into local curry dishes and the same skin removal process was utilized. Keeping the skin on adds way too much fat to the curry as it renders and therefore becomes an imbalanced dish. The great chefs that devised these processes and recipes a thousand years ago knew exactly what they were doing LOL! Cheers and happy cooking!
