    I struggled with this too, when making sushi. There are 3 things I noticed are easy to do wrong. 1. Wrong kind of rice. You want to use short grain rice, any short grain will do. But Tomaki sushi rice for high-end/quality, and calrose for cheap rice. 2. You NEED to use sushi rice seasoning. This is a 3:2:1 ratio of rice vinegar, sugar, and salt. Mix it on low heat in a pan. And use a 1:10 ratio of it in your rice when its dine cooking. 3. Too much rice on the seaweed. Too much rice will cause your roll to fall apart, no matter how sticky your rice is. Use a minimum amount of rice to start, and increase as you become comfortable. Bonus. 4. Use a really sharp knife. Your roll will be smushed otherwise.
