simple and amazing dish
Thanks Duncan. I love your calm and peaceful style. I made this dish on Saturday. Very simple but the flavour is sensational. The pork belly gets so crispy with this method. This is the first time I have been happy with a pork belly dish. I used some hot small red chillis from my garden and it was just great. Thanks for the lesson. Have been watching your show in Australia on Channel 94 Lifestyle and I'm hooked.

Many people in thailand don't prefer put other veg. (Such as carrots , long green bean , baby corn , onion , green onion ...etc) except holy basil in this menu.

There is a secrete to making Grapao , smash garlic and chilli together in mortar first will gives better scents of herbs and taste.

I have a question, when you boil the pork belly, do you put it on the water when it's still cold and wait it for an hour, or you put it when the water is hot already and wait it for an hour?

Hi Terry, will vary depending on cut and temp of oil but until it starts to go golden and crispy, cheers
I'm Thai, and judging from the amount of fish sauce I put in it, I'm sure it's very salty. Normally, Thai cooking tends to put various seasonings a little at a time and taste if you are not skilled enough.

No green chili, no spring onion. Only veg in this dish should be cut up long beans. Mash the chilis and garlic together beforehand. Add a dash of soy sauce. fry the krapao before you add the oyster sauce etc, the smell and taste of krapao becomes more fragrant when you bake it instead of boil it in liquid. If it is too dry add a splash of broth. This is also served with a fried egg on top in most cases. Not really impressed by this to be honest. this is not how Thai people cook this dish.
