At 13:57, I would put a black-out shade on the window to the left of the potato tower, IN CASE the light makes some of them start to sprout. Then, if necessary, you could block out most of the light most of the time, and pull the shade up when you are in the pantry (for people who are scared of the dark, LOL).

You have a wonderful pantry. Living and gardening in Florida for 40+ years I know how difficult it can be to store food like potatoes and onions. It would be great if you could set up a small electric solar system and run a couple window A/C units and even the freezers in there . I noticed you have one A/C in there already. It gets really hot and humid here. We usually just freeze our surplus garden veggies. And having solar keeps everything running and most months we have a credit on our bill. Looking forward to seeing your future videos especially your garden.

On your potato drawers you might want to consider replacing the bottoms with a hard plastic mesh or something that will allow more airflow which will allow the potatoes to store longer. Airflow and light blockage are very important for storing potatoes. You could crate straw beds and cover with straw to store in the environment you created.
